Herb-Roasted Chicken with Creamy Cauliflower Mash & Soft Carrots

When you’re cooking for a parent or grandparent, you want something nourishing, gentle, and satisfying, without spending hours in the kitchen.

This meal is balanced, protein-rich, and designed with tender textures that are easy to enjoy.

Serves: 4
Total Time: 30 Minutes
Prep: 10 minutes
Cook: 20 minutes

Ingredients:

Chicken:
• 4 boneless, skinless chicken breasts (4–5 oz each)
(Chicken thighs may be substituted for extra tenderness)
• 1 tablespoon olive oil
• 1 tablespoon fresh lemon juice
• 1 teaspoon dried thyme (or Italian seasoning)
• ½ teaspoon garlic powder
• ¼ teaspoon black pepper
• Optional: light pinch sea salt

For the Creamy Cauliflower Mash:
• 1 large head cauliflower, chopped (about 5–6 cups)
• 2 tablespoons plain Greek yogurt
• 1 tablespoon olive oil or unsalted butter
• 2 tablespoons warm milk (dairy or fortified almond milk)
• 1 tablespoon grated Parmesan (optional)

For the Soft Glazed Carrots:
• 3 large carrots, sliced thin
• 1 teaspoon olive oil
• 1 tablespoon water or low-sodium broth
• Tiny pinch cinnamon (optional)

Instructions: Preheat oven to 375°F. Place chicken in a baking dish. Drizzle with olive oil and lemon juice, then sprinkle thyme, garlic powder, and pepper. Cover loosely with foil to keep moist. Bake 18–22 minutes, until internal temperature reaches 165°F. Let rest 5 minutes before slicing thinly across the grain.

Steam or boil cauliflower until very soft (10–12 minutes). Drain well. Blend with yogurt, olive oil, milk, and Parmesan until smooth and creamy. Add a little extra milk if a softer texture is preferred.

Add carrots, olive oil, and water to a skillet. Cover and cook on medium-low for 8–10 minutes until very tender. Sprinkle a tiny pinch of cinnamon if desired. Cook a few minutes longer if an even softer texture is needed.

Meals like this do more than provide nutrition, they create comfort, routine, and connection around the table.

A huge thank you to Woodlands Senior Care & At Your Side Home Care for hosting last night’s Dementia Live workshop.

What an eye-opening experience for our resident families and community members. Cassy and her team created something truly special, an interactive, educational evening that gave people a real glimpse into what it feels like to live with dementia. That kind of understanding changes everything about how we show up for the people we love.

We are so grateful for the partnership and the care you put into this. Thank you, Cassy and the entire Woodlands Senior Care team.

Choosing an assisted living community is one of the most important decisions you'll make. đź’™

Don't leave your tour without asking:
- How will you get to know my loved one?
- What does your pricing actually include?
- Can I drop by unannounced to visit?
- How do you support families through this transition?
- What happens if care needs increase?

Trust your instincts. The right community will make you feel heard, not rushed.

We'd love to answer these questions (and any others on your heart) during a tour of Ambria.

🍽️ Recipe of the Week: Lemon Herb Salmon (Perfect to Make at Home for Someone You Love)

If you’re looking for a simple, nourishing meal to prepare for your parent or grandparent, this one is both heart-healthy and full of fresh flavor.

It’s easy to make, gentle on digestion, and feels special without being complicated.

Ingredients (Serves 4)
• 4 salmon fillets (about 6 oz each)
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 lemon (zested + sliced)
• 1 tbsp fresh parsley, chopped
• 1 tsp dried thyme
• Salt & black pepper to taste

For the sides:
• 1 lb fresh green beans, trimmed
• 2 large sweet potatoes, peeled and cubed
• 1 tbsp olive oil
• Pinch of sea salt

Directions
Preheat oven to 400°F.
Toss sweet potatoes with olive oil and salt. Roast for 25–30 minutes until tender.
Place salmon on a lined baking sheet. Drizzle with olive oil and top with garlic, lemon zest, thyme, salt, and pepper.

Lay lemon slices over each fillet. Bake 12–15 minutes, until salmon flakes easily.

Steam or sauté green beans until just tender (about 5–7 minutes).

Garnish salmon with fresh parsley and serve alongside roasted sweet potatoes and green beans.

Meals like this do more than nourish the body, they create moments around the table that remind someone they’re cared for.

And when preparing every meal starts to feel overwhelming, that’s often when families begin exploring supportive community options.

If you’re ever navigating that season, we understand this isn’t an easy decision. We’re here to answer questions whenever you’re ready.

How do families know when it might be time for more support?

For most, it isn’t one big moment or a sudden crisis.
It’s a series of small changes that quietly add up.

Daily tasks feel harder.
Safety concerns start to surface.
Isolation grows.
Family often feels it first through worry, exhaustion, and uncertainty đź’›

Noticing these signs means you’re paying attention.

Many families reach this point quietly, long before anything urgent happens.
If this feels familiar, you’re not alone 🤍

Sometimes the most caring step is simply acknowledging what’s changing and giving yourself permission to ask questions and explore options, at your own pace 🌱

Movement, laughter, and staying active together, just another morning at Ambria. đź’™
Our residents joined one of our care partners for chair yoga today, because staying active should always feel good, not like a chore. Whether you're stretching, strengthening, or simply enjoying the company, it's all about moving at your own pace and finding joy in the moment.

This is what community looks like, where staying active is something we do together, and everyone participates in ways that feel right for them.
