We’re celebrating St. Patrick’s Day this month with festive coloring pages — and it’s more than just a fun way to get into the spirit of the season.
For seniors, picking up colored pencils and filling in a page is genuinely good for the brain and body:

👁️ What someone with dementia may see can be very different from what we see.

As dementia progresses, a person’s field of vision can slowly shrink. What looks like a normal room to us may feel more like looking through a narrow tunnel to them.

That’s why how we approach someone matters so much.

If we walk up from the side or behind, they may not see us coming. To them, it can feel like someone suddenly appeared out of nowhere — which can be frightening or disorienting.

A few small changes can help someone feel safer:
✨ Approach from the front whenever possible
✨ Move slowly into their line of sight
✨ Gently say their name before touching them

Understanding what our loved ones may be experiencing helps us respond with more patience, compassion, and care.

Herb-Roasted Chicken with Creamy Cauliflower Mash & Soft Carrots

When you’re cooking for a parent or grandparent, you want something nourishing, gentle, and satisfying, without spending hours in the kitchen.

This meal is balanced, protein-rich, and designed with tender textures that are easy to enjoy.

Serves: 4
Total Time: 30 Minutes
Prep: 10 minutes
Cook: 20 minutes

Ingredients:

Chicken:
• 4 boneless, skinless chicken breasts (4–5 oz each)
(Chicken thighs may be substituted for extra tenderness)
• 1 tablespoon olive oil
• 1 tablespoon fresh lemon juice
• 1 teaspoon dried thyme (or Italian seasoning)
• ½ teaspoon garlic powder
• ¼ teaspoon black pepper
• Optional: light pinch sea salt

For the Creamy Cauliflower Mash:
• 1 large head cauliflower, chopped (about 5–6 cups)
• 2 tablespoons plain Greek yogurt
• 1 tablespoon olive oil or unsalted butter
• 2 tablespoons warm milk (dairy or fortified almond milk)
• 1 tablespoon grated Parmesan (optional)

For the Soft Glazed Carrots:
• 3 large carrots, sliced thin
• 1 teaspoon olive oil
• 1 tablespoon water or low-sodium broth
• Tiny pinch cinnamon (optional)

Instructions: Preheat oven to 375°F. Place chicken in a baking dish. Drizzle with olive oil and lemon juice, then sprinkle thyme, garlic powder, and pepper. Cover loosely with foil to keep moist. Bake 18–22 minutes, until internal temperature reaches 165°F. Let rest 5 minutes before slicing thinly across the grain.

Steam or boil cauliflower until very soft (10–12 minutes). Drain well. Blend with yogurt, olive oil, milk, and Parmesan until smooth and creamy. Add a little extra milk if a softer texture is preferred.

Add carrots, olive oil, and water to a skillet. Cover and cook on medium-low for 8–10 minutes until very tender. Sprinkle a tiny pinch of cinnamon if desired. Cook a few minutes longer if an even softer texture is needed.

We are so excited to open our doors tonight for The Woodlands Dementia Experience — and we mean that from the bottom of our hearts.

Hosting this event is exactly why Ambria exists. Caring for a loved one with dementia is one of the hardest things a family can walk through, and tonight is about giving you something rare, a chance to truly understand what your loved one experiences, and to leave feeling more equipped and less alone.

🍽️ Recipe of the Week: Lemon Herb Salmon (Perfect to Make at Home for Someone You Love)

If you’re looking for a simple, nourishing meal to prepare for your parent or grandparent, this one is both heart-healthy and full of fresh flavor.

It’s easy to make, gentle on digestion, and feels special without being complicated.

Ingredients (Serves 4)
• 4 salmon fillets (about 6 oz each)
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 lemon (zested + sliced)
• 1 tbsp fresh parsley, chopped
• 1 tsp dried thyme
• Salt & black pepper to taste

For the sides:
• 1 lb fresh green beans, trimmed
• 2 large sweet potatoes, peeled and cubed
• 1 tbsp olive oil
• Pinch of sea salt

Directions
Preheat oven to 400°F.
Toss sweet potatoes with olive oil and salt. Roast for 25–30 minutes until tender.
Place salmon on a lined baking sheet. Drizzle with olive oil and top with garlic, lemon zest, thyme, salt, and pepper.

Lay lemon slices over each fillet. Bake 12–15 minutes, until salmon flakes easily.

Steam or sauté green beans until just tender (about 5–7 minutes).

Garnish salmon with fresh parsley and serve alongside roasted sweet potatoes and green beans.
