Let's make leftovers!

We took the beef stew and some veggies and made a pasta out of it...and it was goooood! It was quick and easy to make and the boys had a ton of fun making it with me!

But more importantly, they ate it...a lot of it! So make this, use whatever protein you prefer, and let me know how you like it!

Who doesn't love a good stew on a chilly day? This was pretty easy to make; partly because I used a crockpot, but also because I cut veggies in-between sets as rest.

I don't need to tell you how good this came out (because you have eyes 🤪), but I will tell you my boys kept asking for "more meat, please!" and my daughter ate more carrots than I've ever seen her eat! So make this during a cold fall night and let me know how it comes out!

It's ok to eat carbs. It's ok to eat fats. It's ok to eat mac and cheese. Carbs and fats don't cause weight gain, calories do. So count your calories and find your balance; food is never an enemy. Create a healthy relationship with food and enjoy that mac and cheese!

And remember, one bowl of mac and cheese with your daughter will have more of an impact on both of your happiness than it will your waistline.

This started as a cheesy topping for the acorn squash, but ended up being a perfect topping for the cod! The cinnamon baked acorn squash even fit in perfectly. And with macros like this, you'll definitely want to add this to your fall food rotation! (which is a real thing....right?)

This turned out so much better than I thought it would! Let that shrimp (or chicken if you're Dr. Wife) marinade with some red bells, pineapple, teriyaki, soy, and ginger. Grill it up when you're ready and crisp a high fiber wrap!

Here it is, the Salmon Mozz Taco with a Creamy Cilantro Lime Sauce. This one is easy: If you like salmon and you like tacos and you like a filling, low calorie, high protein food, this...just this. Make it now! Make it again and again. It's INCREDIBLE! Season your salmon how you like. I used a a simple rub and put it on the smoker, but baking or grilling also works.

Add the outside mozz after you pan fry the taco. I tossed it into the oven under the broiler until it was melty and gooey. Remember not to be stingy with that sauce ;)

Shout out to Dr Wife for this one! She makes one of my FAVORITE salads, and this time she threw some steamed shrimp onto it for me! This high protein salad is surprisingly filling, surprisingly low calorie, packed with flavor, and for those who like a crunch, the toasted chickpeas provide a nice snap in each bite! So grab yourself some lite Caesar dressing, get some shrimp or grilled chicken, and eat something that feels like a cheat meal, but certainly isn't!
