These Baked Salmon Sushi Bowls turn ordinary weeknight salmon and rice into something extraordinary.
Dressing:
2 tbsp avocado oil
1 tbsp honey
2 tbsp coconut aminos
1 tsp fish sauce
2 tbsp lemon juice
2 tsp sriracha (to taste)
2 cloves garlic, minced
Bowls:
1½ cups cooked brown rice
1 avocado, sliced
2 Persian cucumbers, thinly sliced
2 green onions, sliced
4.5 g roasted seaweed or nori, sliced
2 tbsp toasted sesame seeds
Extra sriracha (optional)
Instructions
Bake Salmon: Preheat oven to 325°F. Pat salmon dry and place in a baking dish. Mix 2 tbsp avocado oil, 2 tbsp coconut aminos, 1 tsp ginger, 1 tsp sesame oil; pour over salmon. Season with salt and pepper. Bake 25–30 min until flaky.
Make Dressing: Whisk together all dressing ingredients; set aside.
Assemble Bowls: Flake salmon over rice. Top with avocado, cucumber, green onions, and nori. Drizzle dressing and sprinkle sesame seeds. Add sriracha if desired. Serve and enjoy!
