🧣Perfect sweater weather food...even better eaten by a campfire!

🔥 Enjoyed baking this loaf in a Dutch oven as a trial for this weekend's event at Discovery Park of America.

🌾 We'll be baking a loaf over the fire Friday morning, besides milling grain and mixing dough throughout the day on both Friday and Saturday.

**Pumpkin Swirl Sourdough**
A sweet suggestion from one of my favorite customers!
Made with sifted, freshly milled organic white wheat, pumpkin, maple syrup, and vanilla—rolled up with coconut sugar and warm spices. Best toasted with cream cheese or butter, and (if you’re feeling indulgent) a drizzle of maple syrup. 🍁

**Spiced Craisin Orange Scones**
Studded with jewels of sweet dried cranberries, kissed with orange zest, cinnamon, ginger, and cardamom. Perfect for a crisp fall morning—like a warm hug in pastry form. 🧡

Any of you noticing a slight difference in the texture of our maple spelt loaves lately?

The last 3 weeks the dough has been crazy unmanageable. I'll give it a set of stretch and folds and by the time I'm done it's flattened into a puddle again! Even after adding extra flour and decreasing the water!

But is it worth it? You bet!
It's just part of the blessing of making bread out of an ancient whole grain instead of a factory processed refined flour.

And with a whole product like this the exact variety of spelt, the region, land, and type of season it was grown in all play a part in its strength and protein content!

So thank you for understanding if these loaves of late are slightly more chewy or crusty as I learn to work with this 'different' spelt!

A lovely customer friend offered me her basil last week. So today, off to gather; I went.;)

Talk about a delightful drive home with all that herbal goodness. Ahhh.....

Thanks to all who are pre-ordering. You are the BEST!

I had a few too many loaves left last week so I'm cutting amounts down a bit on certain varieties.
So please order by Wednesday night if you want a specific variety!

Did you know 100% naturally-leavened breads are more 'gluten-friendly' than yeast breads?

Sorry sourdough breads made with yeast aren't going to help!
