French Onion Pot Roast Recipe 🍲✨
A lean + nutritious comfort meal to stay healthy through the holidays!

Skip the heavy holiday dishes and try this lighter, flavor-packed French Onion Pot Roast made with trimmed lean beef and wholesome ingredients. Here’s how to make it:

Ingredients:
• 3 lbs boneless beef chuck roast, trimmed
• 3 tsp salt
• Ground black pepper
• 3 tbsp olive oil
• 6 large onions, thinly sliced
• 1 cup dry red wine
• 2 ½ cups low-sodium beef broth
• 5 sprigs fresh thyme (plus more for serving)
• 2 dried bay leaves
• 2 whole carrots
• 3–4 medium potatoes, cut into large chunks

Instructions:
1. Preheat the oven to 325°F (163°C).
2. Pat the roast dry and season generously with salt and pepper.
3. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned, then remove and set aside.
4. Add the sliced onions to the pot and cook until golden and caramelized (about 15 minutes).
5. Pour in the red wine to deglaze, scraping up any browned bits.
6. Add beef broth, thyme, bay leaves, carrots, and potatoes. Return the roast to the pot.
7. Cover and cook in the oven for 3–3½ hours, or until the meat is tender and pulls apart easily.
8. Remove bay leaves and thyme. Slice or shred the roast and serve with extra broth and fresh thyme on top.
