🍲 Delicious & Healthy Quinoa Salad 🥗
Boost your energy and keep your body nourished with this easy quinoa salad! Perfect for lunch or a light dinner.
Ingredients:
* 1 cup quinoa
* 1 cup cherry tomatoes, halved
* 1 cucumber, diced
* 1/2 red onion, finely chopped
* 1/4 cup parsley, chopped
* 1/4 cup feta cheese (optional)
* 2 tbsp olive oil
* Juice of 1 lemon
* Salt & pepper to taste
Steps:
1️⃣ Cook quinoa according to package instructions. Let it cool.
2️⃣ Mix cherry tomatoes, cucumber, red onion, and parsley in a bowl.
3️⃣ Add cooled quinoa and toss everything together.
4️⃣ Drizzle olive oil and lemon juice, season with salt & pepper.
5️⃣ Sprinkle feta cheese on top if you like. Serve fresh!
