Our Teen Cuisine students are proving that healthy food tastes good! Students worked together to prepare Broccoli Cheddar Frittata for our breakfast lesson, and they even came back for seconds!

Students learned knife safety and chopping skills, how to reduce risk of cross contamination, and how to follow a recipe. This frittata is an inexpensive, quick, and easy breakfast! Try to include at least 3 food groups in your breakfast to fuel your mind and body. Our frittata features protein, dairy, and vegetables.

Valentine’s Day is a time for celebration and love. Treat your valentine to a special treat that is full of flavor and nutritious.
Area Nutrition Agent, Claire Barbier shows how to make delicious heart-healthy cookies.
Peanut Butter Cookies
Ingredients:
Vegetable oil spray
½ cup margarine, room temperature
½ cup sugar
½ cup firmly packed brown sugar
1 egg
½ cup creamy peanut butter, reduced fat
½ teaspoon baking soda
1 cup all-purpose flour
½ teaspoon vanilla extract
Instructions:
1. Preheat oven to 350 degrees Fahrenheit. Lightly spray cookie sheet with vegetable oil.
2. In a large mixing bowl, using the back of a wooden spoon, cream margarine until soft. Add sugar gradually and mix until creamy. Mix in egg, peanut butter and baking soda.

It’s Mardi Gras season! As celebrations take place across the state, be sure to keep the good times rolling with these tips:
-Control portions. Enjoy season treats like king cake in moderation (unless you want to get the baby and pick the next cake.)
-Pack healthy snacks. Fuel up for the festivities with snacks that keep you energized and won’t lead to a crash later.
-Stay hydrated. Drink plenty of water to avoid dehydration and headaches. Hydration packets and fruit can help replenish electrolytes, but water is best.
-Pace yourself. Mardi Gras is a marathon, not a sprint. Don’t overindulge too early unless you want the good times to come to a screeching halt.
