1 medium head cauliflower (2 pounds)
1 red bell pepper
1 orange bell pepper
1 medium white onion
3 green onions
3 tablespoons rice vinegar*
¼ cup soy sauce (or tamari or coconut aminos)
1 tablespoon light miso
½ tablespoon gochujang (optional)
2 tablespoons sugar (or maple syrup)
2 tablespoons sesame oil (regular, not toasted)
1 teaspoon cornstarch (or arrowroot powder)
3 tablespoons neutral oil for stir frying, divided

PARMESAN OVEN ROASTED CAULIFLOWER

Ingredients

▢1 large head of cauliflower cut into florets
▢1 tbsp extra virgin olive oi
▢Kosher salt and black pepper to taste
▢1 tsp garlic powder
▢1/2 tsp onion powder
▢1 tsp smoked paprika
▢½ cup Parmesan cheese grated
▢Fresh parsley to garnish
Instructions
Preheat the oven to 400ºF and line a baking sheet with parchment paper
Place the cauliflower florets into a large bowl.

Drizzle with olive oil, and sprinkle with all the seasonings. Using your clean hands toss well to get all pieces evenly coated.
Transfer the cauliflower to the prepared baking sheet and arrange in a single layer.
Roast for 15 minutes, then sprinkle with the parmesan cheese. Bake for 15 minutes more, or until crisp tender.
Garnish with freshly chopped parsley and enjoy!
