Vegan Creamed Spinach with Cashew Cream
1 lb fresh spinach, washed and chopped
1 cup raw cashews, soaked for 4 hours and drained
1 cup vegetable broth
2 cloves garlic, minced
1/4 cup nutritional yeast
1 tablespoon lemon juice
Salt and pepper to taste
In a blender, combine soaked cashews, vegetable broth, garlic, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
In a large skillet, wilt the chopped spinach over medium heat for about 2-3 minutes.
Pour the cashew cream sauce over the wilted spinach and stir well.
Cook for an additional 5 minutes until the sauce thickens.
Serve hot as a side dish or over Gluten free pasta.
