Vegan Creamed Spinach with Cashew Cream
1 lb fresh spinach, washed and chopped
1 cup raw cashews, soaked for 4 hours and drained
1 cup vegetable broth
2 cloves garlic, minced
1/4 cup nutritional yeast
1 tablespoon lemon juice
Salt and pepper to taste

In a blender, combine soaked cashews, vegetable broth, garlic, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
In a large skillet, wilt the chopped spinach over medium heat for about 2-3 minutes.
Pour the cashew cream sauce over the wilted spinach and stir well.
Cook for an additional 5 minutes until the sauce thickens.
Serve hot as a side dish or over Gluten free pasta.

Roast Turkey

1 whole turkey (12-14 pounds)
1/2 cup butter, softened
2 teaspoons salt
1 teaspoon black pepper
1 small bunch thyme, chopped
1 small bunch rosemary, chopped
1 small bunch sage, chopped
1 large yellow onion, quartered
3-4 garlic cloves, minced
1 lemon, halved

Preheat your oven to 325°F (160°C).
Rinse and pat dry the turkey. Place it on a rack in a roasting pan.
In a small bowl, mix together the softened butter, salt, pepper, thyme, rosemary, sage, and minced garlic.
Rub the seasoned butter mixture all over the turkey, including under the skin. Squeeze the lemon halves over the turkey and place them inside the cavity along with the quartered onion.
Roast the turkey in the preheated oven for about 15 minutes per pound or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
