Credit goes to Hervé This—sometimes called the “father of molecular gastronomy”—for this streamlined chocolate mousse. The magic lies in choosing a high-quality dark chocolate that, when combined with a splash of hot water, thickens into a luxurious, creamy dessert. It sets very fast as it cools, so be prepared to adjust your whisking speed. In case you whisk it too far and it becomes grainy, simply melt it down again, chill, and whisk once more.

Ingredients:
• Ice cubes (for the ice bath)
• 4 ounces dark chocolate (70% cocoa or above), chopped
• 3 ounces hot water
• Optional garnish: flaky sea salt or chopped pistachios

Directions:
1. Fill a large bowl with ice and set aside.
2. Whisk the chopped chocolate and hot water in a medium bowl until smooth and melted.
3. Set the bowl on top of the ice bath. Whisk steadily until the mixture begins to thicken—this can happen quickly.
A sprinkle of flaky sea salt or crushed pistachios on top and voilà! Creamy, dreamy chocolate goodness.
