Vegan Loaded Sweet Potatoes – your new go-to lunch idea!

Crispy on the outside, fluffy on the inside, and fully loaded with flavor. Perfectly baked sweet potatoes topped with a hearty black bean & corn mix, melty vegan cheese, fresh guac, and a zesty kick of lime. So simple, so good!

Ingredients:

2 large sweet potatoes

1/2 cup canned black beans (drained and rinsed)

1/2 cup canned corn (drained)

1/2 cup vegan cheese shreds (cheddar-style)

1/2 cup cherry tomatoes (diced)

1/4 cup red onion (finely diced)

1/2 avocado

1 tablespoon lime juice

1 tablespoon fresh cilantro (chopped)

1/2 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

Instructions:

Bake the Sweet Potatoes:

Preheat your oven to 400°F (200°C).

Wash the sweet potatoes and pierce them with a fork.

Bake directly on the oven rack or on a baking tray for about 45–60 minutes until tender.

Prepare the Filling:

In a bowl, combine black beans, corn, cumin, smoked paprika, salt, and pepper. Mix well.

Warm the mixture slightly in a pan or microwave if you prefer it hot.

Make Simple Guacamole:

Mash the avocado with lime juice, a pinch of salt, and a bit of chopped cilantro.

Assemble:

Once the sweet potatoes are done, carefully cut them open lengthwise.

Lightly mash the inside with a fork.

Top with vegan cheese and the bean-corn mixture. Allow the heat to melt the cheese slightly.

Add chopped tomatoes and onions on top.

Finish with a scoop of guacamole and a sprinkle of fresh cilantro.

✔ 2 large eggplants, diced (about 4 cups)
✔ 3 zucchini, diced (about 3 cups)

✔ 1 large onion, chopped
✔ 4 garlic cloves, minced
✔ 2 tbsp fresh thyme leaves
✔ 2 bay leaves
✔ ¼ cup fresh basil, chopped

3️⃣ Cook the Vegetables – Add eggplant and bell peppers, cooking for 5 minutes. Stir in zucchini, tomatoes, thyme, bay leaves, and remaining olive oil. Season with salt and pepper.
4️⃣ Simmer & Infuse Flavor – Reduce heat to low, cover, and let simmer for 30-40 minutes, stirring occasionally, until tender.
5️⃣ Finish with Fresh Basil – Remove bay leaves, stir in fresh basil, and adjust seasoning to taste.

Vegan Walnut & Orange Mixed Salad🥗

Recipe:

Ingredients:
- 100g mixed salad leaves
- 2 large oranges, peeled and segments
- 2 medium tomatoes, sliced
- 1 cucumber, sliced
- 1 small red onion, thinly sliced
- 50g walnuts, toasted
- A handful of black olives
- 2 tbsp olive oil
- 1 tsp Maple syrup
- 1 tsp Dijon mustard
- 1 tsp Apple cider vinegar
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish

1. Arrange the mixed salad leaves in a large serving bowl or platter as the base.
2. Evenly distribute the orange segments, tomato slices, cucumber slices, and red onion over the greens.
3. Scatter the toasted walnuts and black olives across the salad.
4. In a small bowl, whisk together the olive oil, Maple syrup, Apple cider vinegar, and Dijon mustard until smooth. Season with salt and pepper to taste.
5. Drizzle the dressing over the salad just before serving to ensure the greens stay crisp.
6. Garnish with freshly chopped parsley to add a touch of color and freshness.
