✔ 2 large eggplants, diced (about 4 cups)
✔ 3 zucchini, diced (about 3 cups)
✔ 4 large ripe tomatoes, diced (about 3 cups)
✔ 2 red bell peppers, chopped
✔ 1 large onion, chopped
✔ 4 garlic cloves, minced
✔ 2 tbsp fresh thyme leaves
✔ 2 bay leaves
✔ ¼ cup fresh basil, chopped
✔ ¼ cup olive oil
✔ Salt and freshly ground black pepper, to taste
👩🍳 Instructions:
1️⃣ Prep the Vegetables – Dice eggplant, zucchini, tomatoes, bell peppers, and onion. Mince the garlic.
2️⃣ Sauté the Aromatics – Heat 2 tbsp olive oil in a large pan over medium heat. Add onion and garlic, cooking until fragrant.
3️⃣ Cook the Vegetables – Add eggplant and bell peppers, cooking for 5 minutes. Stir in zucchini, tomatoes, thyme, bay leaves, and remaining olive oil. Season with salt and pepper.
4️⃣ Simmer & Infuse Flavor – Reduce heat to low, cover, and let simmer for 30-40 minutes, stirring occasionally, until tender.
5️⃣ Finish with Fresh Basil – Remove bay leaves, stir in fresh basil, and adjust seasoning to taste.
