Lasagna Soup - All of the flavor without all of the carbs!

Ingredients:
1 Tbls olive oil
1 pound ground turkey
1 small onion, diced
1 yellow pepper, diced
4 cloves garlic, minced
3 cups chicken broth
1 (14 oz) can diced tomatoes (I use Rotel)
1 (15 oz) can tomato sauce
1 tsp Italian seasoning
¼ tsp red pepper flakes (more if you want it spicy)
1 tsp basil
Salt & pepper to taste
3 packets Proti pasta
Shaved parmesan cheese - optional
Shredded mozzarella - optional

Directions
1. Brown ground turkey and onions in olive oil.
2. Add garlic and peppers and cook until tender, about 2 minutes.
3. Add broth, tomatoes, tomato sauce and seasonings; bring back to a simmer and add pasta packets.
4. Simmer for 15-20 minutes or until pasta is tender. (Proti pasta is firmer than regular pasta when cooked)
5. Serve with a tablespoon of shaved parmesan or shredded mozzarella cheese. (This will add 20-35 calories to your dish - figure this into your nutritional facts)

Bacon Wrapped Chestnuts - Broiled chestnuts wrapped in bacon.

Ingredients:
1 lb Bacon, cured, raw, thick slices, 12/lb , cut each slice in
half, crosswise
1 canned water chestnuts , drain well (8 oz can)

Directions:
1 Slice each piece of bacon in half and wrap around a water
chestnut.
2 Skewer with toothpick to hold in place.
3 Broil in toaster oven or conventional oven, turning every 5 minutes, until the bacon is evenly cooked.
This can take up to 25 minutes.

Additional Information
Thick slices of turkey bacon can be used as well.

Spiced Pecans
Not only are these a sweet and crunchy snack, you can sprinkle them over low-sugar ice cream for a quick and easy dessert.

Ingredients:
• 1/2 cup "measures-like-sugar" calorie-free sweetener
• 1 1/2 teaspoons ground cinnamon
• 1 teaspoon ground nutmeg
• 1/4 teaspoon salt
• 1 large egg white
• 4 1/2 teaspoons water
• 2 1/2 cups pecan halves
• Cooking spray

Preparation
1. Preheat oven to 300°.
2. Combine first 4 ingredients in a medium bowl, stirring well.
3. Beat egg white and water with a mixer at medium speed until foamy. Gradually add sweetener mixture, 1 tablespoon at a time, beating until stiff peaks form; fold in pecan halves.
4. Pour pecan mixture onto a jelly roll pan coated with cooking spray. Bake at 300° for 25 minutes, stirring every 10 minutes.
5. Cool completely in pan. Store in an airtight container.

Healthy Vegan Almond Cookies
The recipe for these Healthy Almond Cookies couldn't be any more simple, and they're so filling and delicious!

Ingredients:
½ cup almond butter
⅓ cup filtered water
⅛ teaspoon sea salt
½ cup vanilla pea protein powder
1 tablespoon chia seeds

Directions:
1. Preheat the oven to 325F (163C).
2. Mix almond butter and water until combined.
3. Add sea salt. Mix well.
4. Add protein powder. Mix well.
5. If the batter is too sticky (sticks to your fingers), add a little more protein powder.
6. Add chia seeds, and knead the dough with your hands to mix them in.
7. Form the cookie dough into 12 balls, and flatten each ball with the palm of your hand.
8. Place cookies onto parchment-lined cookie sheet.
9. Bake for 15-18 minutes, until firm to the touch.
10. Enjoy!

Sausage and Cheese Breakfast Casserole

Ingredients
• Cooking spray
• 12 ounces turkey breakfast sausage
• 2 cups 1% low-fat milk
• 2 cups egg substitute
• 1 teaspoon dry mustard
• 3/4 teaspoon salt
• 1/2 teaspoon freshly ground black pepper
• 1/4 teaspoon ground red pepper
• 3 large eggs
• 16 (1-ounce) slices white bread
• 1 cup (4 ounces) finely shredded reduced-fat extrasharp cheddar cheese
• 1/4 teaspoon paprika

Preparation
1. 1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sausage to pan; cook 5 minutes or until browned, stirring and breaking sausage to crumble. Remove from heat; cool.
2. 2. Combine milk and next 6 ingredients (through eggs) in a large bowl, stirring with a whisk.
3. 3. Trim crusts from bread. Cut bread into 1-inch cubes. Add bread cubes, sausage, and cheddar cheese to milk mixture, stirring to combine. Pour bread mixture into a 13 x 9–inch baking or 3-quart casserole dish coated with cooking spray, spreading egg mixture evenly in baking dish. Cover and refrigerate 8 hours or overnight.
4. 4. Preheat oven to 350°.
5. 5. Remove casserole from refrigerator; let stand 30 minutes. Sprinkle casserole evenly with paprika. Bake at 350° for 45 minutes or until set and lightly browned. Let stand 10 minutes.
