High-Protein Ranch Chicken & Spaghetti Squash Bowls 🔥
Easy to make, loaded with flavor, and perfect for meal prep.

Here’s how to make it:

1. Roast the Squash
Cut 1 spaghetti squash in half lengthwise. Brush with olive oil, season with salt and pepper. Bake at 375°F for 45 minutes.

2. Mix the Ranch Seasoning
In a small bowl, combine:
• 2 tsp each: garlic powder, onion powder, parsley, chives, dill
• 1 tsp each: salt, black pepper

3. Cook the Chicken
Toss 2 lbs chicken tenders (or breasts/thighs) with 2 Tbsp of the ranch mix.
Place on a sheet pan and roast in the oven with the squash for the final 30 minutes.

4. Make the Sauce
Mix together:
• 1/2 cup Greek yogurt
• 1/4 cup hot sauce
• 2 Tbsp ranch mix

5. Assemble Everything
Once cooked, shred the squash with a fork and cut the chicken into bite-sized pieces. Mix the shredded squash, chicken, 2 cups of shredded cabbage, 1/2 cup shredded cheddar, and the spicy ranch sauce in a large bowl and enjoy!!

Macros per serving (makes 6):
• 48g protein
• 6.9g carbs
• 6.4g fat
• 276 calories

Craving something healthy and packed with flavor? Try this delicious bowl featuring hummus, tzatziki, quinoa, fresh tomatoes & cucumbers, topped with juicy chicken meatballs and crispy chickpeas! 🌱

Ingredients:

For the Bowls: Hummus, tzatziki, tomatoes, cucumbers, quinoa, feta cheese
For the Chicken Meatballs: 1 lb ground chicken, 1/4 cup parsley (or 1/2 cup fresh), 1 egg, 3/4 tsp each of salt, pepper, garlic powder, onion powder, chili powder, 1 tbsp olive oil
For the Chickpeas: 1 can chickpeas (rinse and dry), 1/2 tsp each of salt, pepper, paprika, 1 tbsp olive oil
Bake the meatballs at 400°F for 15 minutes & chickpeas at 400°F for 10 minutes for the perfect crunch.

Macros: 527 calories, 29g fat, 31g carbs, 43g protein.
3 meatballs, 1/2 cup quinoa, tomatoes, cucumbers, 2 tbsp hummus and tzatziki, and 3 tbsp feta.
