This lazy girl’s day off dinner was quick and easy to pull together! Some quick chops of broccolini, peppers, onion, potatoes, garlic and tomatoes, drizzled with olive oil and roasted at 425 degrees, are making the bulk of dinner tonight. I’m going to serve this with instant pot quinoa. 10 minutes of prep time, and an hour of Cook time. And I will have lots of leftovers for lunches. 🌱🍝
