By this time of the season, if you’re growing vegetables or love your farmers market or have a CSA share or can access the abundance in your local grocer figuring out ways to use all the vegetables can get overwhelming! I spent this morning making a big pot of vegetable soup and then with a lot of the rest of it. I’m just cutting nice and drizzling with olive oil and popping in the oven to roast. Makes for a nice side dish or snack for the coming days.
