Chilly rainy days are perfect days for a healthy and hearty soup - and a clean out of all the vegetables in the fridge/pantry and fresh herbs that I need to use up in the process.

Loaded Vegetable Soup:
Tip - use what you have and measure with your heart and it will turn out great every time!
*rough chop, or cut into chunks the veggies to your liking.
•use any variation you like but this time I used a bulb of garlic and shallots (peeled), tomatoes, mushrooms, bell peppers, eggplant. *note: leftover roasted beets and carrots added later.
•Drizzle all with EEOV and sprinkle generously with ground black pepper, and a little salt of your choice (I used pink Himalayan). Then toss altogether making sure all are coated.
•Roast @ 400 Degrees for 45 minutes - stir once and add more EEOV midway through.
•When done, add everything to a large sauce pot along with fresh herbs of your choice - I used basil and rosemary, cover all with a liquid stock of your choice to just above the vegetables - I used chicken stock because that is what I had on hand, season to taste if needed. Bring up to a boil then switch to simmer setting. With an immersion blender combine until smooth consistency. Add additional stock if needed until soup is desired consistency.

Tip: If you don’t have an immersion blender you could use a standard blender and mix all in small batches.
