Simple Mild Chickpea Curry
Ingredients:
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 tablespoon mild curry powder
1 teaspoon ground cumin
2 cans chickpeas, drained and rinsed
1 can diced tomatoes
1 cup coconut milk
Salt and pepper to taste
Optional: fresh spinach or chopped cilantro and fresh chilis
Directions:
1οΈβ£ Heat olive oil in a large pan over medium heat. Add diced onion and cook until softened.
2οΈβ£ Stir in minced garlic, curry powder, and cumin. Cook for 1 minute until fragrant.
