Stay on track with health goals and a boost of energy with this simple 15 minute, no bake recipe snack. This is my protein bar snack swap without the added sugar and without inflammatory oils. Get the kids involved and pack in their lunch, send with hubby and reserve a few for yourself!
ENERGIZING MATCHA BALLS RECIPE🌱
PREP TIME: 5 minutes
TOTAL TIME: 15 minutes
SERVINGS: 1-2
INGREDIENTS:
▫️1 cup cashews (or seeds*)
▫️1-2 tablespoons honey (or less*)
▫️1/2 teaspoon vanilla extract
▫️1/2 teaspoon ground ginger (cloves*)
1-1 ½ teaspoons matcha powder(pique)
MODIFICATIONS:
*43 pumpkin seeds + ⅛ tsp sunflower seeds (nut free option or those with food sensitivities)
*1 tsp max for those on low fod map (SIBO)
* 1/2 tsp ground cloves or cinnamon (food sensitivities; omit cinnamon if avoiding high histamine foods).
INSTRUCTIONS:
Add cashews (or seeds) to a food processor and pulse until finely ground,
not powdery. Add honey, vanilla, ginger (clove or cinnamon) and matcha powder.
Blend until sticky & combined. Scoop mixture and roll into 1-inch balls. Chill in the refrigerator for at least 1 hour. Serve & Enjoy! ☺️
