Ingredients
🥚 6 large eggs
🥚 1/4 cup milk
🥚 1 cup fresh spinach, roughly chopped
🥚 1/2 cup cherry tomatoes, halved
🥚 1/4 cup red bell pepper, diced
🥚 1/4 cup crumbled feta cheese
🥚 1 tablespoon olive oil
🥚 Salt and pepper to taste
Instructions
✅ Preheat the oven to 375°F.
✅ In a bowl, whisk together the eggs and milk, then season with salt and pepper.
✅ Heat olive oil in an oven-safe skillet over medium heat.
✅ Add the bell pepper and cook for 2 minutes, then stir in the spinach until wilted.
