This cozy chicken & sweet potato skillet is simple, filling, and packed with nutrients to keep you fueled through the cold weather.
Ingredients:
• Boneless skinless chicken breast (cubed)
• Sweet potatoes (diced)
• Red onion
• Spinach or Broccoli
• Olive oil
• Garlic
• Paprika, salt & pepper
Cook chicken in olive oil, add sweet potatoes and seasoning, sauté until tender, then finish with fresh spinach.
