Have you ever wondered how ghee is made? I took a few pics of the process when I made it this past full moon.
I cook the butter on very low heat for a long time. I like to do a few pounds at a time so I can let it cook for a good amount of time. This batch took over 4 1/2 hours.
I cook it until it's see through, not cloudy and the bits start to brown. The smell is a huge indicator of when it's ready to be called done, as well as what the pops and sizzles sound like.
It's mesmerizing to watch it cook. It does all sorts of splurting, belching and bubbling of this smooth and velvety golden liquid. I imagine it's like watching a cauldron.
The scum (yes, it's called scum) that cooks off the ghee has a thick, chunky and sticky consistency. Pics below. Imagine that running through the rivers and channels of the body. Coating and sticking to the arteries and veins.
Once the gunk is gone this becomes liquid gold. A healing, nourishing elixir, good for the digestive system, the nervous system, the skin, the eyes...the list goes on. So many benefits! And it's delicious!!
