Whether you're a or lactose intolerant
(or just curious), here's a fun recipe to try out - Vegan Mac & Cheese! Instead of cheese, we use , which gives a rich nutty flavor. It may not taste the same as normal mac & cheese, but it sure is delicious in a different way😋
Here is the recipe📝:
1) Boil 4 cups of water with 1/2 tsp salt and 1 tsp oil.
2) Add 1 cup pasta and cook until it is "al dente".
3) Remove pasta from heat, drain the water and keep aside.
4) Soak 1/4 cup cashews in a cup of warm water for 30 minutes.
5) Then ground the cashews along with water to a fine paste.
6) In a saute pan, heat 2 tsp oil and add 1 clove of garlic(minced).
7) Once the garlic is golden brown, add 1/2 cup
soy or almond milk.
8) Once it bubbles, add the cashew paste, and stir well to combine.
9) Wait until the mixture starts bubbling again, and add cooked pasta.
10) Mix well to coat the pasta with sauce. Sprinkle 1/4 tsp red chili flakes and serve hot.

When we're talking about fall desserts, it's
hard to beat the apple + cinnamon combination!

Apple pies are usually high in calories due to the pie crust, but you can enjoy our even if you're watching your weight. It's also super easy

Here is the recipe👩‍🍳📝:
1) preheat oven to 350℉.
2) Scoop out the core of 2 apples from the top (don't cut all the way through).
3) Stuff each apple with 1 oz cottage cheese and 1 oz nuts of your choice (we used mixed nuts here).
4) Place the apples in a shallow baking dish. Add 1 tbsp honey and 1/2 tsp ground cinnamon on top of each apple.
5) Bake in the preheated oven for 15 minutes. Enjoy🍎☕️!

Potatoes are a very nutritious vegetable. Why not incorporate potatoes into today's meal!

Here is our Potato🥔 & Cucumber🥒 Salad!

Here is the recipe🧑‍🍳📝:
1: Peel 2 medium potatoes and cut them into quarters.
2: Boil some salted water and cook the potatoes until soft.
3: Drain and cool.
4: Slice the potatoes into 1/2" thickness.
5: Cut 1 small onion in half and thinly slice.
6: Thinly slice 1 small cucumber.
7: In a bowl, combine the onion and the cucumber, add 1 tbsp olive oil, mix well, and set aside.
8: Rinse and chop 1 bunch fresh parsley.
9: In a pot, add 1/3 cup vinegar, 1 tsp sugar, 1 tsp yellow mustard, some salt and pepper.
10: Let it come to a boil, add 1/3 cup vegetable stock, and let it boil until it's reduced to half.
11: Turn off the heat and add the potato slices and the onion-cucumber mix.
12: Give it a good stir. Garnish with fresh parsley and spring onions (optional).

🥑on toast is delicious, but we also love it in salads. It's a great way to add some healthy fat so you can feel full longer. You want to make sure you have some protein too, so add some grilled shrimp, chicken, or chickpeas and you got a well-balanced meal!

How about our Avocado Shrimp Salad tonight?

Here is the recipe✍️🧑‍🍳
1: Heat a skillet with 1 tbsp olive oil.
2: Add 2 garlic cloves (sliced) and fry 6 shrimp.
3: Set aside. Thinly slice ½ bell pepper, ½ onion and ¼ red onion.
4: Cut ½ cup cherry tomatoes in half.
5: Slice ½ avocado.
6: In a small bowl, combine 1 tbsp honey, 3 tbsp extra virgin olive oil, 1 tbsp apple cider vinegar, salt and pepper to taste.
7: In a mixing bowl, combine 2 cups salad leaves (spring mix), 1 cup baby spinach, all the cut veggies, and the cooked shrimp.
8: Pour the dressing over, stir together, and serve intermediately. Enjoy!

They're good for a snack, breakfast, on its own, on top of yogurt, with cereal, etc.

Some store-bought granola can be high in sugar and fat, so it's best to make your own. Experiment with different nuts/seeds and also various mix-ins.
Let us know what your favorite combination is!
Here is the recipe📝:
1: Preheat oven to 350℉.
2: Line a baking tray with parchment paper.
3: In a large bowl, combine 2 cups , 3/4 cups nuts and/or seeds (here, we used walnuts and sunflower seeds), and 1/4 tsp cinnamon.
4: Pour in 2 tbsp olive or coconut oil, 3 tbsp honey, and 1/2 tsp vanilla extract.
5: Mix thoroughly. Spread the mix on the baking tray.
6: Bake until golden (~10 minutes), stir, and bake again (~5minutes).
7: Take the tray out of the oven and let it cool.
If desired, you can mix in chocolate chips, toasted
, etc.
8: Store in an airtight container and enjoy!

If you have a favorite food that's not the
healthiest, you don't have to entirely give it up!

are one of the foods that we choose to
control the portion and frequency rather than trying to modify recipes.

We usually cut them a little smaller and freeze them after we bake! That way, we don't
overeat, and we can enjoy them for a long time.

Here is the recipe: 🖌
Lemon Cranberry Scones🍋

1: Preheat oven to 375℉ and line a baking tray with parchment paper.
2: In a large bowl, combine dry ingredients - 2 cups all-purpose flour, 3 tbsp sugar, 1 tbsp baking powder, and 1/4 tsp salt.
3: Zest 1 lemon and add to dry ingredients.
4: Cut 1/2 cup butter into small pieces and mix in the dry ingredients.
5: Add in 1/2 cup heavy cream, 1/4 cup almond milk, 1 large egg, and 1 tsp vanilla extract, ensuring that all ingredients are thoroughly mixed together.
6: Dust the top of a work surface with a bit of flour and flatten the dough out.
7: Press 1 cup dried cranberries into the dough, fold it over and flatten.
8: Repeat several times until all the dried cranberries are added evenly to the dough.
9: Flatten the dough into a circle, roughly 10 inches wide, and cut into 12 wedges.
10: Place the wedges onto the baking tray.
11: Brush the top of the scones with a bit of almond milk.
12: Bake for 20-25 minutes.
