Ingredients:
2 eggs
5oz of shredded chicken
1/2 chopped onion
1/2 chopped seedless tomato
1 teaspoon of olive oil
Parsley and oregano to taste
salt to taste
Method of preparation:
In a container, mix eggs until well blended.
Add chicken, onion, parsley, oregano, and tomato. Mix everything.
Season with salt to taste.
Place the mixture in a skillet heated with a little bit of olive oil and let it set.
Using a spatula, turn on the other side to brown.
Place the omelet on a plate and serve immediately.
