Always great to read about the impact we've had on member of the community. Glad to see Lisa has made a full recovery and is back to her normal life!

Pumpkin Muffin Mounds! Fun to carve or use as decor, pumpkins make their mark that fall is here! Edible, they are packed with nutrition and fiber! Save yourself money and excess unhealthy calories from store bought "pumpkin" donuts, lattes, smoothies and pie and try this yummy recipe! Made as is, this one is a winner for those with gluten-sensitivity or on a paleo diet. If coconut flour or oil is not in your pantry, experiment with oat, almond, quinoa or whole wheat pastry, using 1 egg to ½ cup flour. Exchange applesauce for the oil and even maple syrup for honey! Happy fall!
