Creamy Tortellini Soup with Sausage, Kale & Butternut Squash
Ingredients
• 1 lb lean hot Italian sausage (or ground turkey)
• 1 medium onion, diced
• 3–4 cloves garlic, minced
• 1 (15 oz) can tomato sauce
• 4 cups chicken broth (or 4 tsp Better than Bouillon + 4 cups hot water)- use bone broth for even more protein
• 1 (9 oz) pkg cheese tortellini
• 1½ cups cubed butternut squash
• 2 cups chopped kale (or spinach)
• 1 cup heavy cream
• 2 tbsp olive oil
• Parmesan, for serving
Seasoning Mix
1 tsp basil • ½ tsp oregano • ¼ tsp thyme • ¼ tsp rosemary • 1 tsp sugar • ½ tsp each salt & pepper
Instructions
1. Brown Sausage: In the Instant Pot on Sauté, heat olive oil and cook sausage until browned. Drain excess grease.
2. Add Aromatics: Stir in onion and garlic; cook 2–3 min until softened.
3. Season & Deglaze: Add seasoning mix and a splash of broth to deglaze the pot.
4. Add Base: Stir in tomato sauce, remaining broth, and butternut squash (if using).
5. Pressure Cook: Seal lid and cook on High Pressure for 5 min. Naturally release 5 min, then quick release.
6. Add Tortellini & Kale: Set to Sauté, add tortellini and kale, and simmer 5–7 min until tortellini float and kale softens.
7. Finish: Stir in cream, adjust seasoning, and serve with grated Parmesan.
