Do you enjoy overnight oats? Creamy, chewy, and cold…
What if I told you, eating that is terrible for your digestion and gut health!!! Ideally we should never eat uncooked oatmeal. In their natural form these grains are essentially indigestible for humans.
Oats are full of phytic acid and 0 phytase, the enzyme needed to break them down, which we happen to mostly lack in our gut/intestines.
Don’t fret though, you can still enjoy this yummy quick breakfast hot or cold! It’s all about the proper preparation.
The first step is to soak the rolled oats overnight. 7-12 hours is ideal, I like to use a 1:1 ratio of oats to filtered water. The next step is critical, add 2 tbsp of whey or nice splash of ACV. Mix and cover with a plate.
In the morning to prepare, you simply cook as normal using a 1:2 ratio of oats to filtered water. Draining or rinsing is unnecessary! Cook until soft, if they are chewy you did not cook long enough and they will be harder to digest!
Enjoy your oatmeal with a natural sugar like maple syrup or honey, and a large pat of butter! You can even add nuts (soaked of course), fruit, etc. If you like cold oatmeal prepare a large batch and you can enjoy them right from the fridge!
