❄️ Cold weather calls for warm, nourishing meals—and your crock pot makes it easy! 🥘✨

Slow Cooker Sweet Potato & Lentil Curry

Ingredients:

1 ½ cups red lentils, rinsed

2 medium sweet potatoes, peeled and diced

1 can light coconut milk

1 can diced tomatoes

1 onion, chopped

3 cloves garlic, minced

1 tbsp ginger, grated

2 tsp curry powder, 1 tsp cumin, ½ tsp turmeric

Salt & pepper to taste

Fresh cilantro for garnish

Directions:

Add all ingredients (except cilantro) to the crock pot.

Cook on low for 6–7 hours or high for 3–4 hours.

Stir, taste, adjust seasoning, and serve with cilantro on top.
