Kiwi and Mint Infused Water
Ingredients
- 1 handful fresh mint
- 4 kiwis
- 4 cups water

Preparation
Wash and peel the kiwis.

Cut them into thin slices. Wash the mint sprigs.

Place kiwi slices and mint in a large jar/bottle.Fill the jar/bottle with water and cover.

Place in the fridge and chill for at least 2 hours, for best results overnight.

Tuna Sandwich Savory Cake (Swedish Smörgåstårta)
Ingredients
- 350g Canned Tuna
- 150g Mayonnaise
- 100g Sour Cream
- 60g Sweet Corn
- 2 Hard Boiled Eggs
- Spring Onion
- Salt and Pepper to taste
- Fresh Parsley
- 16 slices sandwich bread
- 60g shredded cheese
- 6 Small Tomatoes
- 1 Small Cucumber
- 1 lemon
- 3 sprigs fresh dill

Preparation
In a food processor blend tuna, sweetcorn, mayonnaise, sour cream, hard-boiled eggs, salt and pepper. Process until smooth.Wash and finely chop parsley.On a serving tray (or a square cake board) layer 4 slices of toast bread (crust removed) to create a square.

Spread a few (3-

heaped table spoons of the tuna mix over the bread and spread around evenly.

Sprinkle some parsley over the spread and cover with bread. Repeat the process until you have used all bread slices (and used all the tuna mix).Keep it in the fridge for several hours (at least 2 but for best results overnight).The following day, mix sour cream with mayonnaise and cover the cake using a spatula.

Sprinkle with grated cheese and chopped spring onion (the green parts only).Thinly slice the cucumber, tomatoes, and lemon. Decorate your cake with these and some dill sprigs.Keep in the fridge prior to serving!

Fruit Terrine Dessert
Ingredients
- 2 tablespoons Cornstarch
- Ice cubes
- 2 packages lemon gelatin dessert mix
- 1 tablespoon Milk
- 3/4 cup Orange juice
- 2 teaspoons orange zest
- 1/4 cup Sour cream
- 2 10 oz packages frozen strawberries
- 1 1/2 cups Boiling water
- 8 ounces Cool Whip whipped topping, thawed

Preparation
DISSOLVE gelatin in boiling water.

Combine orange juice and ice cubes to make 1-3/4 cups.

Add to gelatin, stirring until ice is melted. Stir in orange rind.

Place bowl in larger bowl of ice and water.

Let stand, stirring occasionally, until gelatin is slightly thickened, about 5 minutes.FOLD whipped topping into gelatin mixture. Spoon into 8x4-inch loaf pan.Chill until firm, at least 3 hours. Unmold onto cutting board.STIR together sour cream and milk. Spoon about 2 tablespoons of the Strawberry Sauce onto individual dessert plates. Swirl sour cream mixture through Strawberry Sauce to form design. Slice terrine; place in sauce on plates.

Garnish with fruit, if desired.MAKES 8 to 10 servings,Prep time: 30 minutes,Chill time: 3 hours

Strawberry Sauce: PLACE strawberries in food processor or blender; cover.Process until smooth.

Combine cornstarch with small amount of the strawberries in medium saucepan; add remaining strawberries. Bring to boil over medium heat, stirring constantly; boil 1 minute. Chill.MAKES 2 cups.

Cucumber Mint & Lime Detox Water
Ingredients
- 1 small cucumber
- 2 sprigs fresh mint, washed & bruised
- 1 lime
- 10 to 12 cups cool filtered water

Preparation
Scrub and slice the cucumber.Wash the mint.Scrub and slice the lime.

Place the cucumber slices, mint, and lime slices in a large pitcher or bottle. Fill with water. Cover and refrigerate for 1-8 hours (the longer you infuse the water, the stronger the flavor.)

Detox Orange Carrot Juice
Ingredients
- 6 carrots
- 4 oranges
- 2 inch fresh ginger (use less if you want a more subtle ginger flavor)
- 1 tsp of ground turmeric (or 2 inches of fresh turmeric)
- Honey, to taste

Preparation
Juice carrots, oranges, and ginger in your juicer as well as turmeric if using fresh.

Stir in ground turmeric and honey.

Divide between two medium glasses or one large glass.

Enjoy immediately.

Feel lighter and refreshed.

Big Batch Smoothie Bowl
Ingredients
- 90 grams whey protein
- 150 grams frozen strawberries
- 150 grams frozen blueberries
- 3 bananas
- 1 pomegranate
- 60 grams walnuts
- 30 grams pumpkin seeds
- 30 grams flaxseed
- 180 grams granola

Preparation
Blend frozen berries, kefir, and protein powder. It is best to do this in advance so it's not too icy cold.Portion out each serving and top with sliced bananas, pomegranate seeds, granola, ground nuts, and flax.Enjoy!

Ingredients
- 1 tablespoon unsalted almond butter
- 1 tablespoon apple sauce
- 1/2 cup vanilla fat free yogurt
- 1 tablespoon 7 grain granola
- 1/4 teaspoon Ground cinnamon
- 1 teaspoon honey
- ice cubes
- 1 teaspoon Maple syrup
- 1/2 cup milk
- 1 red delicious apple, cut into pieces

Preparation
Combine all ingredients in a blender and pulse until smooth.
