Roasted Sweet Potato Rounds with Honey and Feta
Ingredients
For the Sweet Potatoes

2 large sweet potatoes (about 700 g / 1½ lb), sliced into ½-inch rounds

2 tbsp (30 ml) olive oil

½ tsp salt

¼ tsp black pepper

½ tsp smoked paprika or cinnamon (optional)

For the Topping

100 g (3½ oz) feta cheese, crumbled

2 tbsp (30 ml) honey

2 tbsp chopped fresh parsley or thyme

2 tbsp toasted walnuts or pecans (optional crunch)

Pinch of chili flakes (optional)

Directions
Roast the Sweet Potatoes

Preheat oven to 220°C (425°F). Line a baking tray with parchment paper.

Toss sweet potato rounds with olive oil, salt, pepper, and optional seasoning.

Arrange in a single layer and roast for 22–28 minutes, flipping halfway, until tender and caramelized at the edges.

Add the Toppings

Transfer roasted sweet potato rounds to a serving platter.

Sprinkle evenly with crumbled feta and toasted nuts if using.

Finish & Serve

Drizzle honey over the top while still warm.

Scatter fresh herbs and a pinch of chili flakes if desired.

Serve warm as a side dish or appetizer.
