Better-for-you French toast ๐Ÿž

If youโ€™ve got a picky eater who flat-out refuses eggs, I see you. And I feel your pain.

So I stopped trying to force it and started making this instead.

Eggs are incredibly important for kidsโ€™ development, especially because they provide nutrients that are harder to get elsewhere:

๐Ÿฅš Choline for brain and nervous system development
๐Ÿฅš Vitamin A for growth, vision, and immune health
๐Ÿฅš Easy-to-digest protein and healthy fats

Scrambled eggs werenโ€™t worth the battle in our house.
This works and Iโ€™m satisfied with the easy win. ๐Ÿ†

And even though French toast is more of sweet, comfort food, I make a few simple swaps to up the nutritional value:

๐Ÿž Sourdough instead of white bread
๐Ÿ Real maple syrup, not high fructose corn syrup
๐ŸŒฟ Pure vanilla extract

Is it โ€œperfectโ€? No.

Is it nourishing and something my kid actually eats? Yes.

GREAT POINT! Let's also remember that the diet of animals we consume directly affects the nutritional quality of meat, dairy, & eggs, which impacts human health. This is especially true when it comes to monogastric animals like pigs & poultry.

Modern farming practices have increased PUFA (polyunsaturated fat) levels in chicken and pork, contributing to the overconsumption of omega-6 fats which lead to massive disease causing inflammation.

You are what you eat, eats. Pork can be one of the healthiest foods on the planet or a fast food, causing illness just like the feed it consumed. You don't have to fear the fat if it wasn't fed a diet full of grain/corn/soy. Conventional chicken is now the highest source of linoleic acid (LA), omega-6 fat, in the American diet. Pigs fed a high-PUFA diet can have fat concentrations similar to canola oil. It all matters.

I'll also add that a species appropriately fed heritage breed pig CAN gain a larger (and healthier) fat cap with time & good forage. Acorn finished pork, being my personal favorite.
