Eating Healthy- an important self-care behavior required to manage diabetes. Involves adequate servings of vegetables. Broccoli Rabe, one of my favorite vegetables, with a slight bitter taste. A good source of vitamins A, C, K, and calcium, iron and potassium. Easy to prepare. Pictured: prepared with sliced garlic, olive oil, dried onion flakes. Add optional red pepper flakes or seasoning to taste.

DIABETES AND COVID-19 (CORONAVIRUS)

Every one is at risk of coronavirus. Existing medical conditions like diabetes increase the risk for severe illness. Immunity is the body's natural defense to fight diseases. This natural defense may be compromised in individuals with diabetes and the elderly. During illness, the body normally release "stress hormones". These hormones cause the liver to release sugar (glucose) to help fight the illness. This becomes a problem in diabetes due to insufficient insulin. The blood sugar remains high even when you do not eat anything. This may lead to "Diabetes Ketoacidosis" (DKA). This is a condition where the body burns fat for energy instead of glucose.

What You Can Do

* Follow the guidelines to prevent the virus: frequent hand-washing, social distancing, no close contact with the sick, etc.
*Check your blood sugar more often if you are able
*Keep yourself hydrated with unsweetened fluids
*Eat a healthy balanced diet with more vegetables and fruits.
*Find ways to relieve stress- example, turn off the news channel for a while, turn on relaxing music or watch a show that makes you laugh, meditate, take a short walk, if on lock down, sing your own song and just dance.

The nutrients vitamin C and E are antioxidants which help the cells in the body defend against damage. Zinc also help support the immune system. Zinc can be found in meat, egg, shellfish like crab, beans, cashews. Vitamin E can be found in green leafy vegetables, peanuts (groundnuts) peanut butter, sunflower seeds. Vitamin C is found in mango, orange, strawberries, papaya, broccoli.

BITTER LEAF (botanical name- Vernonia Amygdalina). One of my favorite vegetables used in Nigerian soup and traditional medicine. Known as “onugbu”, “etidot” or “ewuro” (based on dialects). Shown to have anti-inflammatory and antioxidants properties which help the cells in the body defend against damage. Excellent source of vitamin C, zinc, calcium, fiber and plant protein. Avoid overcooking to retain the nutrients.
