Lemon chicken Orzo soup made and packed up for lunches… and enough leftover for dinner. My teenage daughter was leery to try it… when she did she commented “mom, it’s basically chicken noodle soup… why didn’t you just tell me that, I would’ve ate it right away”. I guess it is fancy chicken noodle soup… lol. Packing with an orange. Have a great week!

Weekly lunch meal prep… Lemon Chicken Orzo soup. I had never made this soup before… but it’s good! The lemon adds an acidic note. All packed into containers, throw in a fruit and that’s lunch! I’ll add the recipe in the comments if you are interested.

Weekly lunch meal prep..My version of Hamburger, tomato, macaroni soup (with turkey burger and mushrooms). Make a batch, fill lunch sized containers, refrigerate. Grab one each day with a fruit, easy peasy.

Sunday lunch meal prep. I like to batch cook and pack portions for the week. This week is chicken fajitas (minus the wrap) over quinoa. One portion was actually chicken quesadillas for dinner. I like easy and don’t mind eating the same meal for the week. I pack one container and an orange. Recipe in the comments (as well as recipe for homemade fajita seasoning if you like to have that in bulk).

My lazy Sunday night meal prep. I will pack up the chili ( which has lots of veggies) in several containers for the week and also bring a fruit 🍊. It doesn’t have to be fancy!

Today's lunchboxes : the middle schooler has triscuits, cheese, hummus, chicken, raspberries, cucumbers, and 2 oreos (a rarity in our house...but a beloved treat...everything in moderation!) For me, squash with apples, baby potatoes and chicken (dinner leftovers).

The crock pots are " crockin" today! We have some pear/apple sauce going, and pumpkin turkey chili.... enjoy your holiday!!
