🐠 Here’s what’s on the menu this week and it’s cozy, protein packed and so easy... and a little bit different.

Meal ✌🏽: Salmon Cake Sliders with Apple Slaw
🍽️ Meal 1: Salmon & Sweet Potato Cakes
*See Caption for Veggie option if you don’t love salmon... but I HIGHLY recommend using fresh salmon
Ingredients:
1 lb cooked or canned salmon (drained)
1 ½ cups mashed sweet potato
¼ cup breadcrumbs or panko
1 egg
2 green onions, sliced
1 tsp Dijon mustard
Salt, pepper, and Old Bay to taste
Olive oil for pan-searing
Directions:
If using salmon filet, simply boil until fully cooked through
In a large bowl, mix salmon, mashed sweet potato, breadcrumbs, egg, green onion, mustard, and seasonings.
Form into cakes
Heat olive oil in a skillet over medium heat.
Sear cakes 3–4 minutes per side until golden and crisp.
Serve with:
🥦 Roasted Brussels sprouts or broccoli
🍠 Mashed or roasted sweet potatoes
🥗 Simple arugula or spinach salad with lemon vinaigrette
💡 Time saving tip: Make extra salmon cakes now...you’ll use them later this week for your rollover meal.
🍠 Rollover Meal: Salmon Cake Sliders with Apple Slaw
These make the EASIEST weeknight meals with lots of great texture and cozy fall flavors
Ingredients:
Leftover salmon (or veggie) cakes
Slider or brioche buns (or lettuce wraps)
1 small apple, thinly sliced
1 cup shredded cabbage or coleslaw mix
1 small carrot, julienned
1 tbsp apple cider vinegar
1 tsp honey
2 tbsp mayo
1 tsp Dijon mustard
Squeeze of lemon juice
Salt + pepper
Directions:
Whisk mayo, Dijon, and lemon juice to make a simple aioli.
In another bowl, mix apple, cabbage, carrot, vinegar, honey, salt, and pepper for the slaw.
Reheat salmon cakes and place on buns.
Top with apple slaw and a drizzle of aioli.
💡 Light option: Skip the buns and use lettuce wraps if you’re looking for something lower carb.
