Merry Christmas and Happy Holidays! 🎄✨

The most important nutrient today and tomorrow isn’t protein, fiber, or antioxidants. It’s Vitamin J (Joy).

As a Functional Medicine Dietitian, I spend all year talking about gut health and metabolic markers. But today? I want to remind you that food is also connection, culture, and celebration. 🍽️❤️

Guilt-Free Holiday Magic: Peanut Butter Date Chocolate Chip Cookies! 🍪🎄
Get ready to bake a batch of holiday cookies that are as good for you as they are delicious! These Peanut Butter Date Chocolate Chip Cookies are our answer to healthy holiday indulgence, packed with flavor and free from common diet pitfalls.

✨ WHY YOU’LL LOVE THEM:
No Added Sugar: Naturally sweetened with dates, keeping blood sugar stable.

Low Glycemic: Won’t spike your insulin (the fat-storing hormone!).

Gut-Friendly: Fiber-rich ingredients support a healthy microbiome.

Gluten-Free: Perfect for those with sensitivities.

Wholesome Fats: Healthy fats from peanut butter & almond flour.

INGREDIENTS:

1/2 cup (56g) almond flour
1/2 cup (50g) oat flour
1/2 cup (10-12) soft pitted Medjool dates (+ 2 T hot water)
1/4 cup natural smooth peanut butter
1/3 cup Lilly’s No Sugar Added Dark Chocolate Baking Chips
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp pure vanilla extract
INSTRUCTIONS:
Soak dates in hot water, then blend/mash into a smooth paste.

Preheat oven to 350°F (175°C). Line a baking sheet.
Whisk together almond flour, oat flour, baking soda, and salt.
In a separate bowl, mix date paste, peanut butter, and vanilla.
Combine wet and dry mixtures, then fold in chocolate chips.
Scoop dough onto sheet, flatten slightly.
Bake 10-12 min until edges are lightly golden.
Cool on sheet for 5 min, then transfer to rack. Enjoy!
