Creamy Pistachio Wedge Salad 🥬💚

Crispy, creamy, and absolutely delicious. This salad is powered by crunchy Setton Farms Raw Pistachio Kernels! I loved creating this recipe for the pistachios add the perfect crunch, protein, and flavor to every bite.

✨ Save this for your next refreshing, protein-packed meal!

Ingredients
1 head iceberg lettuce
3 radishes, thinly sliced
½ cup Setton Farms Raw Pistachio Kernels
Salt and pepper to taste
Dressing
3 tbsp minced shallot
1 tbsp + 2 tsp white wine vinegar
ž cup Setton Farms Raw Pistachio Kernels, chopped
⅓ cup mayonnaise
⅓ cup sour cream
3 tbsp olive oil
½ tsp lemon zest
1 Âź tsp lemon juice
1 ½ tsp minced tarragon
3 tsp minced chives
3 tsp minced parsley
Salt and pepper to taste
To make:
1️⃣ Combine shallot, vinegar, and salt; let sit 10 min.
2️⃣ Whisk in zest, lemon juice, mayo, olive oil, and sour cream until smooth. Stir in herbs and chopped pistachios.
3️⃣ Arrange iceberg wedges on a platter, spoon dressing over top, and garnish with radishes, pistachios, salt, and pepper.

Let me explain…

Walking, especially fast walking, is the simplest and most accessible exercise. It burns calories, boosts metabolism and improves mental health.

Sleep sets the tone for your day. Poor sleep impacts decision-making, cravings, hunger, and activity levels. Aim for 8 hours.

You wake up naturally dehydrated, so it’s crucial to hydrate properly in the morning before breakfast, especially before coffee. This helps improve decision-making about food, as thirst is often mistaken for hunger.

Morning sunlight boosts mood and regulates your circadian rhythm, leading to better sleep. When your mood and sleep are well-managed, your overall life improves. Aim for 10-15 minutes of sunlight in your eyes each morning.

Aim for 30-50 grams of protein per meal to stay satisfied and curb hunger. Remember, a fit body is 80% nutrition and 20% exercise. Focus on nutrient-dense foods to change your body composition, and strive to get 90% of your food from real foods found in nature.

The best investment in your body is building muscle mass and strength. This boosts metabolism, enhances your health, and helps you lose fat while building muscle. It also reduces the risk of injuries as you age. Aim for 3-5 resistance training sessions per week.

⭐️⭐️I would add to eliminate any toxins like alcohol and drugs. They disturb sleep, impaired your decision making, lowers your metabolism and disrupts muscle building.

🥗 This salad has it all. Made of cabbage, fennel, fresh herbs, celery, apple and pistachios for the perfect crunch.  Leftovers are even better!

I spent a few hours today with a client in the city talking about what she should have in her pantry, different healthy snacks to grab during busy days, and healthy, delicious meals she can cook for her and her family to enjoy together.

We came up with her shopping list, weekly menu, and small habits she can start this week to lead to a more healthy lifestyle.

During sessions like this, we can also talk through goals and set up an accountability tracker so we are seeing your progress and keeping you on track each week.

There are so many benefits to eating both of these. I try to get my clients to incorporate both of these superfoods into their week on multiple days due to all of the incredible benefits you get from each.

Benefits of Avocado:
1. High in Healthy Fats: Avocados are a great source of heart-healthy monounsaturated and polyunsaturated fats, which can help lower cholesterol levels.
2. Rich in Nutrients: Avocados are loaded with vitamins and minerals, including vitamins C, E, K, and B6, folate, potassium, and fiber.
3. May Help Improve Heart Health: The healthy fats in avocados, combined with their high potassium content, may help lower blood pressure and reduce the risk of heart disease.
4. May Help with Weight Management: The high fiber and healthy fat content of avocados can help promote satiety and prevent overeating, making them a great addition to a weight management plan.

Sara holds a BBA from the George Washington University. She has also studied at The Natural Gourmet Institute in New York City where she advanced her knowledge in cooking healthy, plant based-dishes. Sara resides in Long Island with her four children, along with her professional practice.
