Healthier Pulled Pork - slow cooker meal for a busy night!

Ingredients:
- 1.5–2 lbs pork tenderloin
- ¼ cup soy sauce
- ¼ cup balsamic vinegar
- 2 tbsp mustard (brown or Dijon)
- 2–3 cloves garlic, minced
- Salt & pepper to taste

Instructions
- Place pork tenderloin in a slow cooker.
- In a bowl, mix soy sauce, balsamic vinegar, mustard, garlic, salt, and pepper.
- Pour mixture over the pork.
- Cook on low for 4–6 hours (or high for 2–3 hours) until tender.
- Shred with two forks and mix back into the juices.

Serve on a bun or with coleslaw/side salad and enjoy!
