INGREDIENTS (9x13 pan)
DOUGH
100g active sourdough starter (150% hydration)
400g bread flour
280g warm water
40g honey (or 35g sugar)
8g salt
40g melted butter or olive oil
TOPPING
2–3 cups fruit of choice
3–4 tbsp sugar
2 tbsp melted butter
Optional: lemon zest, vanilla, cinnamon
METHOD
Mix starter, water, honey, and butter. Add flour + salt. Mix until combined. Rest 30 min.
Do 3–4 stretch & folds every 30 minutes.
Bulk ferment 4–6 hrs at room temp (or overnight in fridge).
Transfer to well-buttered 9x13 pan. Let rise 2–4 hrs until puffy + jiggly.
Dimple deeply, press fruit in, sprinkle sugar, drizzle butter, whatever toppings you decide!
** I used homemade strawberry jam and fresh strawberries in a double layer and injected homemade creamcheese frosting into the focaccia after baking 🍓**
Bake at 400°F for 25–30 min until golden and caramelized.
Cool slightly… slice… try not to eat half the pan immediately 🤤
