There's so much power in understanding that we have control over our health and that we are not destined for sickness simply because of our genetics.

It’s so much easier to blame genetics than to take ownership...
It’s easier to say “this runs in my family” than to ask, what choices AM I MAKING every day that are impacting my health?

Because let’s be honest…
It’s easier to grab takeout than to cook.
Easier to snack than to plan.

3 pounds LOCAL pasture raised chicken (you know this is more important than ever if you are following what is happening to our food supply) I used a combination of boneless breasts and bone in thighs from Pat's Pastured
1 cup bone broth
1 tsp onion powder
1 tsp garlic powder
1 tsp salt
1 tsp fresh black pepper
Place all ingredients in a slow cooker, mix everything well.
Cook on high for 3-4 hours until chicken is cooked and is tender. Shred with two forks and a good amount of the liquid over the shredded chicken. This can be stored in the refrigerator for 4-5 days in a sealed glass container.

Choose any veggies you like — dice them small and add to a pie plate. Drizzle with olive oil and season with salt and pepper.

I made:
• Mushroom, leek & parsley
• Broccoli, leek & cheddar

Place in a preheated 350°F oven while you prepare the filling.

For ONE pie:
Blend 6 eggs + ½ cup egg whites (or 8–9 whole eggs) with ¾ cup cottage cheese. Season with salt and pepper.

Each pie makes 4 servings with about 20g of protein per serving.

Pour the egg mixture over the veggies and top with shredded cheese if using. Bake 25–35 minutes. I start checking at 25 minutes because I hate overcooked eggs lol! but 30 minutes is usually perfect.

This is an easy, grab-and-go breakfast packed with protein, veggies, and healthy fats to keep you full and satisfied all morning.

I often pair it with Greek yogurt and fresh fruit or chia pudding to hit my protein goals and help curb cravings later in the day.
