Beef and Cheese Chimichanga
Ingredients
1 ½ lbs. Ground beef
1 Can refried beans
½ Medium onion chopped
2 tsp. Minced garlic
2 tsp. Chili powder
1 tsp. Cumin
½ tsp. Oregano
(10) 10 inch flour tortillas
24 oz. Tomato sauce
4 oz. Diced green chilis in a can
4 oz. Chopped jalapenos in a can
1 ½ C. Shredded taco blend cheese
Salt and pepper to taste
Oil for frying
Instructions
Add the ground beef to a skillet over medium high heat on the stove. Cook until the meat is completely browned, and drain off the excess liquid.
Place the beans, onion, minced garlic, ½ cup of the tomato sauce chili powder, oregano, cumin and salt and pepper to taste into the skillet with the meat. Cook for another 5 minutes over medium heat, stirring to combine the ingredients well.
Heat the tortillas up in the microwave until they are warm.
Place about an inch of oil into the bottom of a deep sided skillet, and heat over medium high heat on the stove.
Put an even amount of filling into the center of the 10 tortillas. Fold one end of the tortillas over the filling, tuck in the ends of the tortilla, and then roll it closed to form a packet. Secure the packet closed with a toothpick.
Place the filled chimichangas into the heated oil, and fry until browned and crispy on both sides. This will not take long, so keep an eye on them.
Drain the excess grease from the chimichangas by allowing them to cool on a paper towel lined tray.
Pour the rest of the tomato sauce, the green chilis and the jalapeno peppers into a saucepan over medium heat on the stove, and heat the sauce until warm. Add salt and pepper to taste if needed.
Ladle the sauce over the finished chimichangas, top with shredded cheese and serve.

Turkish Bread😋

INGREDIENTS

8 ½ cup flour(1,1kg)
1.7 cup of warm water 400 ml
1.7 cup of yogurt 400ml
1 tsp salt
1 pack dry instant yeast 10 g
3 tbsp vegetable oil
½ cups butter 60 g

METHOD

Stir in flour, yeast, yogurt, salt and water. When you have obtained a fine dough, coat it with oil, covered with transparency and leave the amount of dough in a dry and warm place.
After the dough comes in, oil your hands, separate the dough from the pan and divide it into eight balls, which are also kneaded and left to stand for 15 minutes.
Roll each dough ball into a circle and bake on a heated pan.
While the bread is warm, coat it with butter.

KITCHEN TIPS From Africa

1. Never store Onions and Potatoes together because both produce a gas that causes either of them to spoil quickly.

2. Put two or three orange leaves in your hot palm oil on the fire. Let the leaves turn black before removing it. By then your palm oil becomes pure groundnut oil also giving your food a nice taste.

3. To avoid feeling a peppering hotness on your hands after cutting pepper with bare hand scrub your hand with salt and red oil then wash it.

4. If you happen to over salt a pot of soup, just drop in a peeled potato. The potato will absorb the excess salt.

5. If your Soup or Stew goes sour while warming it, add little piece of Charcoal and remove after warming, the taste will come back.

6. Never put citrus fruits (oranges, lemon, lime, etc) or tomatoes in the fridge. The low temperature degrades the aroma and flavor of these fruits.

7. When storing empty airtight containers, throw in a pinch of salt to keep them from getting stinky.

8. If your salt is becoming lumpy, put a few grains of rice in with it to absorb excess moisture.

9. To reuse cooking oil without tasting whatever was cooked in the oil previously, cook a 1/4" piece of ginger in the oil. It will remove any remaining flavors and odors.
