Who’s looking to run a beautiful, scenic marathon with a super awesome race director?!? Who’s also curious about the nutrition side of running?!

Love this! It’s easy to get caught up in our busy lifestyle but I encourage anyone and everyone to volunteer your time with Feeding South Dakota! You can sign up individually or get a group/company together and help fight hunger during these tough times.

Feeding South Dakota has continued to see an increase in food security needs across the state. One volunteer shows up 4 days a week after retiring as a teacher and seeing food security issues firsthand.

Instagram saw it first!

You already know! Taco Tuesday coming at ya 🌮. You’ll definitely want to save this one for dinner tonight.

Crispy Pork Carnitas 🙌🏻
Trust me, you’ll never eat your tacos the same after this easy recipe!!

Ingredients:
4 lbs of skinless pork- I used pork shoulder
4 tsp of salt
1 tsp of pepper
1 tbsp of dried oregano
1 tbsp of ground cumin
8 garlic cloves (the more the better IMO)
1/4 cup of lime juice
1/4 cup orange juice
1 cup of chicken broth
2 bay leaves

Directions:
1. Rinse and pat pork dry with a paper towel
2. Add all ingredients to a slow cooker
3. Cover and cook on high heat for 5-6 hours
4. Once fully cooked, remove pork and shred with forks
5. Transfer pork to a baking sheet and drizzle 1/2 cup of leftover juices in slow cooker
6. Broil for 5-10 minutes on high heat until pork is golden brown and crispy
7. Serve with tacos, burritos, or on top of a salad!
8. Add your fav toppings! I used spicy coleslaw, avocado, salsa, queso, and cilantro 👌

Instagram saw it first!This homemade tomato soup hit the spot for a chilly, snowy Sunday.

Ingredients:
7 large tomatoes
1 white onion
5 tsp of minced garlic
Drizzle of EVOO
2 Tbsp of balsamic vinegar
1 carton of vegetable broth
1 tsp of dried oregano
1/4 cup of milk or milk alternative (I used unsweetened coconut milk)
1 cup of fresh basil
1 Tbsp salt
1 tsp of pepper

Directions:
Cut tomatoes into quarters and sprinkle chopped garlic and sea salt. Roast in the oven at 425 for 45 minutes roughly. Then, sauté the diced onion and add the balsamic vinegar. Add vegetable broth and milk and let simmer. Once the tomatoes are done roasting, transfer to a blender and blend with fresh basil. Transfer the blended tomatoes to the stock and lightly mix together. Garnish with chopped, fresh basil.

Fun fact: grilled cheese sandwiches have always been one of my favs since I was a kid. 😂 A little tip when making grilled cheese, lightly sprinkle garlic powder on top of the butter before placing on the pan. If you want to take it to the next level X2, double up with Gouda cheese 🤤

Hi everyone! Welcome to Errin's Eats! I'm so glad you're here. I am a registered dietitian working at Physio Performance in Rapid City, SD. I have a wide variety of clients including athletes of all ages, patients struggling with weight loss, and individuals seeking medical nutrition therapy. When I'm not working at Physio, I am teaching several different college courses at Black Hills State University.

I created this page as an outlet that you can turn to for reliable nutrition related information. Nutrition isn't always glamorous but it is SCIENCE. I've seen a lot of false information circulating out there that is not backed by science and instead only promotes diet culture and the diet industry. Nutrition is extremely individualized and your nutritional needs are not the same as the person next to you. There is no one-size-fits-all when it comes to your specific nutrition needs.

I will be sharing plenty of recipes, healthy eating tips, and other nutrition related information. Feel free to DM me with any questions you have! Hope you enjoy!
