Recipe of the Week
Asian Crunch Salad with Tempeh

Ingredients:
• 2 packages (16 oz) tempeh, cut into 1⁄2″ cubes
• Drizzle of olive oil
• Dash of garlic powder
• 2⁄3 cup dry quinoa or 2 cups cooked
• 1⁄3 cup smooth peanut butter
• 1 tsp cumin
• 1⁄4 cup soy sauce (preferably low-sodium)
• 1 tbsp Ideal Protein or other low-carb maple syrup
• 1 tbsp + 1 tsp rice vinegar
• 2 tsp toasted sesame oil
• 2 tsp ginger, grated
• 1 lime, juiced
• 2 carrots, ribboned using a vegetable peeler (or grated on the largest holes of a box grater)
• 1 cup frozen shelled edamame, thawed (or 1 cup sliced sugar snap peas, or snow peas)
• 1 cup green onions, thinly sliced (green and light green parts)
• Optional toppings: chopped cilantro and chopped peanuts

Directions:
1. Preheat the oven to 425°F.
2. To cook the tempeh, transfer the cubes to a large rimmed non-stick baking sheet. Toss with olive oil, garlic
powder, and salt. Add more spices to the tempeh as desired, such as paprika, smoked paprika, chipotle
powder, chili powder, and onion powder. Bake the tempeh for about 15 minutes, or until golden brown.
3. Cook the quinoa according to the directions on the package. Fluff with a fork and set aside to cool.
4. Make the dressing: Transfer the peanut butter, tamari, maple syrup, rice vinegar, toasted sesame oil, ginger,
and lime juice to a medium jar or bowl. Whisk well until fully incorporated.
5. Combine tempeh and quinoa with the rest of the salad ingredients and dressing in a bowl, and mix well.
