Stir Fry Tofu Main Ingredients:

1 block of firm tofu, cut into cubes and pressed
8 ounces of sliced mushrooms (cremini, shiitake, or button)
2 tablespoons of vegetable oil (or sesame oil)
3 cloves of garlic, chopped
1 teaspoon of grated fresh ginger
For the sauce:

3 tablespoons of soy sauce (or tamari if you don’t eat gluten)
1 tablespoon of rice vinegar
1 tablespoon of honey or maple syrup
1 teaspoon of sesame oil
Mix 1 tablespoon of cornstarch with 2 tablespoons of water.
Things you can add:

1 sliced bell pepper
1/2 cup of snap peas
1/2 cup of broccoli florets
1/2 teaspoon of red pepper flakes (for heat)
For garnish, use sesame seeds and sliced green onions.
How To Cook Mushroom And Tofu Stir-Fry In One Pan

Get the Tofu Ready
Cut the tofu into 1-inch cubes after pressing it to get rid of extra moisture. To help the tofu get crispy when cooking, lightly cover it with cornstarch.


Cook the mushrooms in a pan over medium-high heat.
In a big pan, heat 1 tablespoon of oil over medium-high heat. Add the sliced mushrooms and sauté them for about 5 minutes, or until they start to release their moisture and turn golden brown. Move them to the side of the pan.


Make the Tofu Crispy
Put the rest of the oil in the same pan. Put the tofu cubes in a single layer and cook them for 3 to 4 minutes on each side, or until they are golden brown and crispy. Add herbs and vegetables
If you are using bell peppers, snap peas, or broccoli, add them to the pan with the tofu. Stir-fry for 2 to 3 minutes, or until the food is soft but still crunchy.
Add the minced garlic and grated ginger and simmer for about 30 seconds, or until the smell fills the air.


Make the sauce.
In a small bowl, mix together the soy sauce, rice vinegar, maple syrup, sesame oil, and cornstarch. Put the sauce on top of the tofu and vegetables. Mix everything together and let the sauce thicken for one to two minutes.


Serve and enjoy
Take it off the fire and top it with sesame seeds and chopped green onions. Serve right away on top of rice or noodles.

* 3 medium beets, peeled and cubed
* 2 medium sweet potatoes, peeled and cubed
* 2 tablespoons olive oil
* Salt & pepper to taste
* 1 ripe avocado, sliced
* Mixed greens (arugula, baby spinach, or your favorite salad base)
For the Whipped Ricotta:
* 1 cup ricotta cheese
* 2 tablespoons lemon juice
* 1 tablespoon olive oil
* Pinch of salt

For the Lemon-Tahini Drizzle:

* 1 teaspoon maple syrup or honey
* 1–2 tablespoons water (to thin)

Roasting vegetables & preparing whipped ricotta
1. Preheat your oven to 425°F (220°C).
2. Toss the cubed beets and sweet potatoes in olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
3. Roast for about 25-30 minutes, stirring once halfway, until tender and lightly caramelized.
4. While veggies roast, prepare whipped ricotta: blend ricotta, lemon juice, olive oil, and salt in a small food processor or blender until smooth and creamy. Adjust consistency with a little water if desired.
Assembling salad & adding drizzle

6. Place greens in a large bowl or individual serving plates.
7. Add the roasted beets and sweet potatoes on top. Layer slices of avocado.
8. Drizzle whipped ricotta over vegetables (you can dollop or swirl).
9. Mix lemon-tahini sauce: whisk tahini, lemon juice, syrup, and enough water to reach pourable consistency. Season with pinch of cumin if you like.
10. Drizzle the lemon-tahini over the assembled salad.
11. Add any garnish such as fresh herbs, seeds, or nuts. Season with extra salt/pepper as needed.

Yummy Lentil Soup * 1 cup brown or green lentils, rinsed
* 1 tablespoon olive oil
* 1 medium onion, diced
* 2 cloves garlic, minced
* 1 tablespoon fresh ginger, grated
* 1 teaspoon ground turmeric
* 6 cups vegetable broth
* 4 cups fresh spinach, roughly chopped
* 1 lemon, juiced
* Salt and black pepper to taste
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until softened, about 5 minutes.
3. Add minced garlic, grated ginger, and turmeric. Cook for 1 minute until fragrant.
4. Pour in vegetable broth and add rinsed lentils. Bring to a boil.
5. Reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender.
6. Stir in chopped spinach and cook for 2-3 minutes until wilted.

Ingredients

For the overnight oats:

2 cups milk (I use unsweetened almond milk)
1/4 tsp kosher salt
2 tbsp honey (optional but adds richness)
4 Medjool dates (pitted, for natural sweetness and creaminess)
2 tbsp chia seeds (absorbs liquid for creamy texture)
1 cup rolled oats (old-fashioned oats work best)
1 tsp ground cinnamon (freshly ground preferred) For toppings (optional):

sliced bananas (optional, adds natural sweetness)
chopped nuts (optional, adds nice crunch)
Step 1: Prepare the Date Paste Base

4 Medjool dates
1/4 cup milk
Pit and coarsely chop the 4 Medjool dates, then add them to a blender or food processor with 1/4 cup of the milk. Blend until you create a smooth, creamy paste—this will act as a natural sweetener and thickener for your overnight oats.

The dates will dissolve into the milk, creating creaminess without needing yogurt. If you don’t have a blender, you can finely mince the dates and whisk them into the milk until mostly broken down.

Step 2: Combine All Wet and Dry Ingredients

1 cup rolled oats
2 tbsp chia seeds
1 tsp ground cinnamon
1/4 tsp kosher salt
date paste from Step 1
1.75 cups milk
2 tbsp honey
divide the 1 cup rolled oats and 2 tbsp chia seeds evenly between them.

Add 1/2 tsp ground cinnamon and 1/8 tsp kosher salt to each jar.

Pour the date paste from Step 1 into the jars, then add the remaining 1.75 cups milk and 2 tbsp honey (if using).Step 3: Shake and Refrigerate Overnight

Seal both jars tightly and shake vigorously for 30-45 seconds, making sure all the oats are submerged and the mixture is well combined. This ensures the chia seeds and oats are evenly distributed and start absorbing the liquid immediately.

Place the jars in the refrigerator and let them sit overnight (or for at least 4 hours, though 8+ hours is ideal).
