The countdown to summer has begun! What better way than to join me along with other past and present Profile members for a 5k Any Way?! Friends and family are welcome to sign up too! You can walk, jog, run, bike, rollerblade, skip, or dance! Whatever feels best for you!

When: Saturday, June 10th, 2023
Time: Meet at 9:30 am - 10:00 am start time
Where: Cascade Lake Park, Zumbro West Park, 88 23rd Ave SW, Rochester, MN 55902

"Egg roll in a bowl is one of the many delicious recipes from the Profile Cookbook. This recipe is easy to make and provides multiple servings. Add on top of a bed of spinach for extra nutrients and antioxidants. Also, great warmed-up as a leftover!"

Egg Roll in a Bowl
Serving: 1 cup
Makes 4 servings
Ready in 30 minutes

Ingredients:
1 lb. lean ground pork, turkey, or chicken
1 bag of shredded cabbage
4 cups vegetables (onions, shredded carrots, green onions, red cabbage, red peppers)
1/4 cup low-sodium soy sauce
1 tsp. ground ginger
Sesame seeds for garnish, optional
Large lettuce leaves

Directions:
1. In a large skillet over medium-high heat, brown ground meat. Drain any excess fat.
2. Add shredded cabbage and other vegetables. Sauté until cabbage is wilted and vegetables are cooked as desired.
3. Add soy sauce and ginger. Stir until combined.
4. Serve in a lettuce leave or on its own.
5. Enjoy!

Clean the garage, rake leaves, or finish the yard work.
Relax with a pretty fall walk in the woods, or trails, or with the dog around the neighborhood. Why not this weekend!

-Quarry Hill hike
-Clean up the yard
-Go play pickleball or tennis
-Go for a bike ride
-Walk the dog
