There is just something about a fresh cuke salad in the summertime!☀️🥗🥒 But, over the last few years, I’ve realized… it’s not just about cucumbers anymore for me. Give me ALL the veggies!!😍🙌🏻

Today’s bowl was loaded with:
🥕 Carrots
🌿 Fresh cilantro
🥬 Cabbage
🌱 Celery
🧅 Onion
🧄 Garlic
• a little salt & pepper
✨ And yes — a splash of vinegar! That tangy bite supports digestion and helps with blood sugar balance too.

Simple. Fresh. Flavorful. And SO satisfying!🙌🏻 Talk about curving your appetite! Hello Complex Carbs & Fiber!

And here’s something I’ve noticed — adding garlic to my veggies actually helps me drink MORE water 💧😉 That little kick makes me naturally reach for my big water bottle, and hydration is soooo important for optimum health first and foremost… But also to help aid in weight loss! 

Water is essential: (shoot for half your body weight in water ounces)

💧 Keeps skin glowing
💧 Aids muscle recovery
💧 Supports metabolism & steady energy

Crispy Air Fryer Chickpeas 😍

1 15-oz can chickpeas, 425g
1 Tbsp olive oil, 15 mL�½ tsp salt
1 to 2 Tbsps seasoning*, see notes

Instructions:

• Drain: Drain and rinse 1 15-oz can chickpeas.

• Dry: Spread chickpeas onto a few layers of paper towels and pat dry (you do not need to remove the skins).

• Stir: Stir chickpeas together with 1 Tbsp olive oil and ½ tsp salt.

• Cook: Spread chickpeas in a single layer in your air fryer basket or rack. Cook at 390°F (200°C) for 8 to 12 minutes, or until crispy and lightly browned. Jostle the pan a few times during cooking to help evenly cook the chickpeas.

• Flavor: While chickpeas are still hot from the air fryer, toss them with 1 to 2 Tbsps seasoning* seasoning, stirring well until seasoning fully coats each chickpea.

• Enjoy as a healthy snack or as a high-protein topper on salads, soups, bowls, or in wraps! Notes:

Optional flavorings: If you like getting fancy with your seasonings, you’ll definitely want to try these ideas👇🏻

Dorito (pictured): 2 Tbsp nutritional yeast, ¼ tsp garlic powder, ¼ tsp onion powder, ¼ tsp cumin, ¼ tsp paprika, ¼ tsp chili powder, ¼ tsp salt

Ranch: ½ tsp dried dill, ½ tsp dried chives, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp salt, ¼ tsp pepper

Coconut Curry: 1 Tbsp unsweetened shredded coconut, ½ tsp curry powder, ¼ tsp salt

Store these roasted chickpeas in a paper bag, or in a loosely sealed plastic bag lined with a paper towel. They keep well at room temperature for up to a week.
