Butternut Squash Mac and Cheese, anyone?!😍🧀

Butternut Squash Mac and Cheese, a healthier version of macaroni and cheese is so creamy and delicious, no one will ever guess it’s also good for you!

PREP TIME:
15 minutes mins
COOK TIME:
1 hour hr
YIELD: 8 servings

Ingredients:

Olive oil spray
Kosher salt
1 pound cubed butternut squash
10 ounces whole wheat elbow pasta
1 ½ cups low sodium vegetable broth (divided)
½ teaspoon onion powder
½ teaspoon garlic powder
¼ cup panko breadcrumbs
2 tablespoons freshly grated Parmesan cheese
1 tablespoon unsalted butter
1 medium shallot (minced)
¼ cup all-purpose flour
2 cups skim milk
½ cup shredded gruyere cheese
½ cup shredded cheddar cheese
Chopped chives (optional, for garnish)

Instructions:

Preheat oven to 375 degrees F. Spray a 9” x 11” glass baking dish with oil and set aside.

Bring a large pot of salted water to boil. Add squash and boil until tender, 5-6 minutes. When fork tender, transfer squash with a slotted spoon to a blender.

Add pasta to boiling water and cook according to package directions. When cooked, drain and put back into the pot.

Meanwhile, add ½ cup vegetable broth, onion powder, garlic powder, 1 teaspoon salt and black pepper, to taste to the blender with the squash. Blend until smooth and creamy.

In a small bowl, combine breadcrumbs, Parmesan, ¼ teaspoon salt and pepper. Set aside.

Melt the butter in a medium sauce pot over medium heat. Add the shallots and sauté 2 minutes. Sprinkle the flour evenly over the shallots and cook another minute.

Add the remaining 1 cup broth and milk and whisk to combine. Bring sauce to a boil, then reduce heat to medium-low and cook 5 minutes, whisking frequently.

Remove pot from heat and whisk in cheese, pureed squash, 1 1/2 teaspoons salt and pepper.

Add sauce to noodles, gently mix to combine, then transfer mixture to prepared baking dish.

Sprinkle with breadcrumb mixture and bake 25 minutes. Switch oven to high broil and broil for 2-3 minutes, or until crumbs are starting to brown.

Serving: 1cup, Calories: 275kcal, Carbohydrates: 43g, Protein: 13g, Fat: 7g, Saturated Fat: 4g, Cholesterol: 21mg, Sodium: 462mg, Fiber: 4.5g, Sugar: 5g

Uffda!! Well, that really hurt😩!

This day has kinda taken a turn for the worst! I got the chance to go horse back riding, something I haven't done in a while. Big mistake!

I got on the horse and started out slowly, but I got a lil too big for my britches!😏 So we started going a little faster and before I knew it, we were going as fast as the horse could go! And when I tried to stop the horse, I couldn't stop him, he must have gotten spooked or something!

He was out of control, so I decided to try to jump off the horse, and instead, I fell off, but as I was falling, my foot got caught in the stirrup , so the horse was dragging me! And he wouldn't stop. Every time I screamed at him to stop, the horse went faster!!

Thank goodness the manager at Wal-Mart came out and unplugged the machine! But he had the nerve to take the rest of my quarters so I wouldn't attempt to ride it again!

Best tasting White Chicken Chili.. EVER! Made out of Herbalife’s Chicken & Vegetable soup mix, just WOW! 🤤😍🌶️

Healthy and light on the calories and fat, and a great protein source!

One bowl is only 203 calories, 4.1g of fat and has TWENTY TWO grams of protein, BOOYAH!💥😍💪🏻🥣

Mine is the bottom left.. as I’m allergic to avocados and didn’t want to add tortilla chips😉 It was ABSOLUTELY delicious!😍
