Apple Orchard Chicken
Ingredients:
Chicken
2 pounds boneless skinless chicken breast
1 teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon chili powder
½ teaspoon kosher salt
¼ teaspoon black pepper
Pam Cooking Spray
Apples
1 tablespoon ghee
¼ cup of monk fruit sweetener
2 medium lemons, juiced (about 3 tablespoons)
2 large Honeycrisp apples, cored, sliced into ½-inch slices
1 medium lemon, sliced for garnish
fresh thyme, for garnish
Directions:
1. Pat the chicken breast dry with paper towels. Season them evenly with the Italian seasoning, paprika, chili powder, kosher salt, and black pepper. Set aside.
2. Put a large nonstick skillet over medium heat, spray with Pam. Once the skillet is hot, place the chicken breast in the skillet. Cook for 6-8 minutes per side, until golden brown and cooked through to an internal temperature of 165°F. Remove the chicken from the skillet, place it on a plate, and tent with aluminum foil to keep warm.
3. To the same skillet, add ghee. Once melted, add the monk fruit and lemon juice, stirring + scraping up any bits from the bottom of the pan.
4. Add the apple slices and cook for about 5 minutes, flipping halfway through, until the apples are slightly caramelized and softened but still hold their shape.
5. Add the cooked chicken back to the skillet with the apples. Turn the chicken to coat it in the monk fruit sauce.
6. Garnish with fresh thyme sprigs and lemon slices before serving.
