Here’s a perfect example Shrimp Asparagus “Pasta is light, fresh, and full of flavor!
🍋 SHRIMP ASPARAGUS PASTA
Ingredients:
• 12 oz pasta (we love Palmini or Heart of Palm noodles!)
• 1 lb large shrimp, peeled and deveined
• 1 bunch asparagus, trimmed and cut into 2-inch pieces
• 3 cloves garlic, minced
• 1 tbsp olive oil
• ½ tsp red pepper flakes (optional)
• 1 lemon (juice and zest)
• ¼ cup fresh parsley, chopped
• Salt & pepper to taste
Instructions:
Cook noodles according to package directions. Reserve 1 cup of pasta water, then drain and set aside.
Heat olive oil in a skillet over medium heat. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Remove and set aside.
In the same skillet, sauté asparagus for 3–4 minutes until tender but crisp.
Add garlic and red pepper flakes (if using) and cook 1 minute.
Return shrimp to the pan, add noodles, lemon juice, and zest. Toss together, adding a little pasta water to create a light sauce.
Stir in parsley, season to taste, and enjoy!
