Corned beef is a cured meat that sits in a salty brine, which means a single serving can quickly add a 𝘭𝘢𝘳𝘨𝘦 𝘢𝘮𝘰𝘶𝘯𝘵 𝘰𝘧 𝘴𝘰𝘥𝘪𝘶𝘮 𝘢𝘯𝘥 𝘴𝘢𝘵𝘶𝘳𝘢𝘵𝘦𝘥 𝘧𝘢𝘵 to your day. For those working hard on their program, it’s something to be mindful of.

Healthy eating doesn’t have to be complicated or boring. At Rockford Weight Loss we focus on eating real food that fuels real results! Try this easy recipe below 👇

Chicken Noodle Stir-fry

INGREDIENTS:
2 boneless, skinless chicken breasts, thinly sliced
8 oz noodles (heart of palm, or spaghetti, squash, on plan)
1 tablespoon ghee
1 onion, sliced
1 bell pepper, sliced
1 cup broccoli florets
3 garlic cloves, minced
1 tablespoon fresh ginger, minced
1/4 cup liquid amino acids
2 tablespoons oyster sauce
1 tablespoon raw honey
1/4 teaspoon red pepper flakes (optional for heat)
Fresh cilantro or green onions for garnish

INSTRUCTIONS:
1. Cook the Noodles: according to instructions
2. Cook the Chicken: Heat 1 tablespoon of ghee in a large skillet or wok over medium-high heat. Add the sliced chicken and stir-fry for 4-5 minutes, or until fully cooked and lightly browned. Remove the chicken from the pan and set aside.
3. Stir-fry the Vegetables: In the same pan, add the onion, bell pepper and broccoli. Stir-fry for 4-5 minutes until the vegetables are tender but still crisp. Add the minced garlic and ginger, and stir for another minute until fragrant.
4. Make the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, raw honey (if using), and red pepper flakes.
5. Combine the Stir-fry: Add the cooked chicken and noodles back into the pan with the vegetables. Pour the sauce over everything and toss well to combine, ensuring the sauce coats all the ingredients evenly. Cook for an additional 2-3 minutes to heat through.
6. Garnish and Serve: Remove from heat and garnish with fresh cilantro or sliced green onions. Serve hot and enjoy!
