After several batches of my Elderberry syrup turning into a jelly type texture and there was NO change to my recipe, I started researching. Here is what I have learned:

Rose Hips can contain different amounts of pectin depending on when harvested.

The last batch of organic rose hips that I used had a lot of pectin. This is what made your syrup turn into a thicker jelly consistency.

Pectin has so many beneficial properties.

"Pectin is highly ionic, and can draw and hold environmental toxins, radioactive compounds, and heavy metals, enhancing detoxification after subsequent exposure."

"People use pectin for high cholesterol, high triglycerides, and to prevent colon cancer and prostate cancer. It is also used for diabetes and gastroesophageal reflux disease (GERD). Some people use pectin to prevent poisoning caused by lead, strontium, and other heavy metals."

If you have some of my jelly syrup and you would like a thinner consistency just add some warm (no warmer than 112 degrees) to your syrup and mix it.

I have since adjusted my recipe to account for the increase in pectin. If you have any questions please send me a message.

Happy Easter to your family from mine.

I'd like to share some things that my family are doing to support our immune system right now.

1. Take Elderberry syrup daily because it is high in vitamins A and C. Elderberry has research proving its effectiveness against viruses and supporting our immune systems.

2. Getting plenty of deep sleep. Research says that people who do not get enough sleep are more likely to get sick after being exposed to a virus.

3. We are eating plenty of nourishing foods. We eat my fermented garlic, homemade kraut, and bone broth on a daily basis. We are also staying away from sugar.

4. Supplementing Vitamin C. Our bodies do not make vitamin C. And research says vitamin c deficiency is associated with increased risk of infections.
