Todays salad:
Spinach
Arugula
Dried Cherrys
Dried Cranberries
Roasted Walnuts
Pistachios Crushed
Roasted Pecans Crushed
Pomegranates
Strawberries
Blueberries
Strawberry poppyseed dressing

Pomegranate can be used in the prevention and treatment of several types of cancer, cardiovascular disease, osteoarthritis, rheumatoid arthritis, and other diseases. In addition, it improves wound healing and is beneficial to the reproductive system.

Wound Recovery. The vitamin C in spinach has many benefits, including helping your body make collagen, which it needs to repair injuries. Vitamin C also helps your body increase the amount of iron it absorbs from plant-based foods, which supports the healing process, too.

Arugula is full of antioxidants -- compounds that can protect against or reverse damage to your cells. Arugula also has glucosinolates. These natural substances, which give arugula its bitter taste and strong scent, may protect you against certain cancers, including breast, prostate, lung, and colon cancers.

Strawberries: These potent little packages protect your heart, increase HDL (good) cholesterol, lower your blood pressure, and guard against cancer. Packed with vitamins, fiber, and particularly high levels of antioxidants known as polyphenols, strawberries are a sodium-free, fat-free, cholesterol-free, low-calorie food.

Poppy seeds are rich in healthy plant compounds and nutrients like manganese. These seeds and their oil may boost fertility and aid digestion.

Walnuts are an exceptionally nutritious nut. They have higher antioxidant activity and significantly more healthy omega-3 fats than any other common nut. This rich nutrient profile contributes to the many health benefits associated with walnuts, such as reduced inflammation and improved heart disease risk factors.

Pecans are a good source of calcium, magnesium, and potassium, which help lower blood pressure. Most of the fat found in pecans is a healthy type called monounsaturated fat. Eating foods with monounsaturated fat instead of foods high in saturated fats (like potato chips) can help lower levels of bad LDL cholesterol.

Participants who ate pistachios daily showed significantly greater reductions in waist size than those who did not. For similar benefits, Harvard Health Publications recommends replacing saturated fat sources, such as potato chips, in your diet with plant-derived fat sources, such as nuts and seeds.

Cherries are low in calories and chock full of fiber, vitamins, minerals, nutrients, and other good-for-you ingredients. You'll get vitamins C, A, and K. Each long-stemmed fruit delivers potassium, magnesium, and calcium too. They also bring antioxidants, like beta-carotene, and the essential nutrient choline.

Many people consider cranberries to be a superfood due to their high nutrient and antioxidant content. In fact, research has linked the nutrients in cranberries to a lower risk of urinary tract infection (UTI), the prevention of certain types of cancer, improved immune function, and decreased blood pressure.

Wanted to share my gluten free lilac cookies but the other posts comments closed lol
💜💜💜💜💜
Start with three bushels of lilac flowers
Pick flowers from the stems and chop
2 sticks of butter
Infuse lilacs in butter in crockpot for two hours with a cup of water per stick of butter
(if more strain and add fresh chopped lillac)
Strain butter and let solidify in a Pyrex
poke a hole in the butter and strain out water
Let butter come to room temp and cream together with 1 cup sugar
Add 2 eggs mix well scrape sides
Add 2 cups chopped lillac mix well
In a separate bowl whisk 2 cups 1:1 baking flour (the krusteaz gf flour works well) 1/2 teaspoon baking powder and a dash of salt
Mix dry and wet well until dough forms
Let chill
Form 1 inch balls and drop into a muffin pan then use the bottom of a glass dipped in sugar to flatten into pan. Bake at 350 degrees for about 10 mins until golden
Lillac glaze
Mix chopped lillac powdered sugar and half and half and glaze over warm cookies.
