Enjoy a healthier Christmas baking option crafted by our Functional Nutrition Counselor & Health Coach.

Gingerbread Cutout Cookies

Gluten-Free • Grain-Free • Refined Sugar–Free
Paleo option included

🍪 Gingerbread Cutout Cookies

Ingredients
• 3 cups almond flour
• ¾ cup tapioca flour
• 1 Tbsp coconut flour
• 1 tsp baking soda
• 1 Tbsp ground ginger
• 1 Tbsp cinnamon
• ¼ tsp ground cloves
• 1 large egg
• ¼ cup molasses (or maple syrup for paleo option)
• ½ cup maple sugar
• 1 tsp vanilla extract
• ⅓ cup grass-fed butter, softened
or ½ cup palm shortening (dairy-free)

Instructions
1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. Whisk all dry ingredients together in a large bowl.
3. In a separate bowl, mix butter (or shortening), maple sugar, and molasses until smooth.
4. Add egg and vanilla; mix well.
5. Stir dry ingredients into wet until a soft dough forms.
6. Chill dough for 2 hours or longer.
7. Roll dough between parchment to ¼-inch thick.
8. Cut into shapes and place on baking sheet.
9. Bake 7–9 minutes, until edges are set.
10. Cool completely before decorating.



Optional Refined Sugar–Free Royal Icing

Ingredients
• 2 egg whites
• 3 cups powdered monk fruit allulose
• 1 tsp vanilla extract

Instructions
1. Beat egg whites until foamy.
2. Slowly add powdered sweetener and vanilla.
3. Beat until thick and glossy.
4. Adjust with a few drops of water if needed.
5. Decorate cookies and let set.

When you slow down and acknowledge what you’re thankful for, your entire physiology responds.
