I'm sitting in the Sprouts parking lot in my car stuffing my face with this... It's so good! And I waited too long to eat. 😬. They have a bogo sale going on with some of their condiments. So the inspiration for this bowl came from what I bought last night. This has a quinoa base with chickpeas and green onions and sweet potatoes. The dressing is olive oil, red wine vinegar, lemon juice, a little honey (which you can skip), seasoning salt, and turmeric. On top, there's pulled pork (any protein will do), hummus, cucumbers, sauerkraut, pickled spicy onions, pickled banana peppers, olives, avocado and tomatoes. You can leave out what you can't eat and add other things.
This is my last day at Sprouts 😭. I'm trying something else new. I'll tell you about it later! I'll miss working here though. It's been alot of fun!
