These are the sticky notes I have above my desk at home! I keep thinking about the "change" one. I kept having this feeling that I needed to share it. It goes through my head often. We have to change to get different results. Think about a recipe. We change one thing and it can change the whole experience of eating that meal or a dessert. Just one little thing. Maybe it's an ingredient, maybe it's the oven temp, maybe it sat longer before baking or was stored in the fridge overnight instead of eating right away or baking right away. So many different scenarios there are of changing a recipe. Every time I cook or bake something I change the recipe, sometimes on purpose and sometimes not. 😂
How does this apply to you? Sometimes it just takes changing one small habit or one small step in a different direction to make a new and healthier you!

Carnitas tacos last night!! I used Siete almond flour tortillas. If you've introduced cassava and tapioca then you can use those. Otherwise, use lettuce wraps or the naan bread recipe in the book. I used carnitas but any protein will do. Onions, cilantro, tomatoes, pickled banana peppers, hot sauce, and pineapple! 🤪 With fermented carrots on the side. ❤️

I'm sitting in the Sprouts parking lot in my car stuffing my face with this... It's so good! And I waited too long to eat. 😬. They have a bogo sale going on with some of their condiments. So the inspiration for this bowl came from what I bought last night. This has a quinoa base with chickpeas and green onions and sweet potatoes. The dressing is olive oil, red wine vinegar, lemon juice, a little honey (which you can skip), seasoning salt, and turmeric. On top, there's pulled pork (any protein will do), hummus, cucumbers, sauerkraut, pickled spicy onions, pickled banana peppers, olives, avocado and tomatoes. You can leave out what you can't eat and add other things.
This is my last day at Sprouts 😭. I'm trying something else new. I'll tell you about it later! I'll miss working here though. It's been alot of fun!

It was a chilly overcast day here in St. George which are somewhat rare. I love soup! This is Tom Yum with a few switches. This one has chicken instead of shrimp and red bell peppers instead of tomatoes. I added cabbage and green onions and avocado. Here's the recipe I loosely followed. You may be able to use a Tom Yum premix paste or seasonings instead, just check out the ingredients.
Use coconut milk instead of dairy milk. I actually forgot to add the coconut milk. Oops! It was good without it.

Meatballs are so versatile and convenient. You can eat them in a stir-fry or dip them in sauce and eat them on their own. I have even eaten them cold standing next to my car during my lunch hour. 😆 They are also a great bedtime snack! 😋
This is my lunch and dinner today and I thought I'd share it with you because it's anti-inflammatory friendly if you're just starting the diet. I sauteed onions, carrots, greens (like spinach and chard), green onions, the cutest little mushrooms, cabbage and apples together for a few mins in olive oil and some water to steam. As they were cooking I mixed ground turkey with seasonings and made them into meatballs and cooked them on one side of the pan for a few minutes then flipped them over and added a little more water, olive oil, and coconut aminos with some sesame seeds and chili flakes. I covered and steamed it all for maybe 5-7 minutes till the meatballs were done. For my lunch I squished a sweet potato at the bottom of the container and added the veggies and meatballs on top. Done!😁 I just ate the rest for lunch and it was great. ❤️

Breakfast tacos this morning! Eggs, turkey bacon, green onions, salsa, sauerkraut in almond flour tortillas! Yum!
If you're doing the anti-inflammatory diet then you have to introduce and be ok with eggs, tomatoes and tapioca to use these ingredients. There's tapioca in the tortillas. If you aren't there yet then you could use a sweet potato hash with turkey bacon or sausage, green chili sauce, and lettuce wraps. Or try coconut flour Naan bread. The recipe is in the diet book!

A hamburger wrap! This was so good! I ate it for dinner, then lunch and dinner the next day. The hamburger was half beef and half venison. I was a little worried about the venison because I'm not used to eating it but I must have seasoned this pretty good because it was great! I put spicy mayo and eggplant dip on it with lettuce, avocado, grilled jalapeno, and sauerkraut. It's wrapped in an almond flour tortilla.
If you've introduced tapioca then those tortillas work for the Anti-inflammatory diet. 😊 And for the Chosen brand Mayo, you have to have eggs and avocado oil in your diet as well.
We got hail yesterday and snow in the mountains! Yay!
